Pours a dark rich mahogany color with a medium off white head. Aroma of overipe fruit like raisins, dates and cherries. You can also detect the oak and malt. The taste is tart and sour but amazingly smooth and complex. The alcohol is nicely hidden and the flavor begs you want to take another sip. Has a tasty dry finish. Dark brown with some red highlights, no head. Aroma is mostly wood, some alcohol, dark malt, light cherry skins, and tartness. Flavor is sort of acidic, very woody, some vanilla and bourbon, dark malt, cherry skins and some sour brett tinges. Sour, somewhat harsh finish. Seems like it needs to settle down. The nose is rich! Toffee, dark malt, vanilla, a pleasant tingle of alcohol, oak- the booziness isn’t sweet, complimenting the oak character. Also has some earthy wood and mild brett character of leather and cherry skins. Substantial palate, both crisp and creamy. Has a nice sharp brett flavor upfront with leather, dust, cheese-rind, cherry skin tartness and bitterness- which is followed by a nice dark malt character with a touch of roast and subtle boozy notes from the bourbon which is never sweet or alcoholic. It’s a perfect marriage of brett-y funk and smooth bourbon/oak. Smooth oak tannins and toasted vanilla as it warms. Extremely well integrated, complex and individualistic. Stepping into this one cautiously...aroma is very interesting and chameleon-like...it changes every time I go in for another try. Picking up on the sour cherries each time, but also catching a caramel-malt like flavor, sweet bourbon, mild oak woods, raisins, and a white-wine like presence sitting on top of it all...very nice and gets a 11 for complexity. Flavor takes you on a wonderful ride as well...initially extremely sweet, it almost instantly turns sour and bites hard with flavors of cherry, bourbon, oak, vanilla and a bit of leather. However, after a couple seconds, it changes from sour back to sweet, and gives a plethora of dark fruit flavors mixed with brown sugar. I’ve never had a beer with such a strong sour character change back to a sweet finish like this...simply unique. Smooth while being somewhat high on carbonation, but it fits the style of this beer very well. Nose is of bourbon and fruit - cherries for sure. Taste is of cherries, bourbon and wood. Mouthfeel is medium-thin and tart, but although I’m not one for Sour beers, this one went down smooth and easy.
