The beer pours with a fizzy head that quickly fades into the solid block of dark amber color. Cannot see through the beer at all and after all remnants of the head fade it looks very still. Aroma is great right off the bat and I was happy this would be one of those special beer experiences. Its very woody (what a second...) with tart red grape skins and musky red cherries. Not sweet but plenty of tart and funk. As soon as you taste it light acidity hits the cheeks to prepare you for the flavor. Then there is lots of light sour, funky cherries. Then comes a tart finish with lingering acidity. A lightly aged, faintly chocolate maltiness underneath all that. Its really just divine to drink. Very easy beer with a long light tart aftertaste. Tastes of oak, lots of funky house character, some fruit, some sugary hints. acrdz (4131), Pennsylvania, USA Apr 15, 2008 2.5 year old bottle shared by kmweaver. Poured carefully it’s clear dark red with a nicely formed and finely-bubbled brown head. First whiff is green olives and a more subdued cherry pit note that comes out more with time, either from warmer temperature or perhaps from exposure to oxygen, but it does get better with time and the green olive note fades (not that green olive is bad, it’s actually quite good in Adam). So the flavor is lightly funky and prickly with the dominant flavor being a woody and nutty black cherry pit, with background flavors of cedar wood and bark shavings, with some wet bran up front that disappears after a short time. Hazy ruby red body with a small beige head. Big sour pie cherry aroma with some caramel, some lactic acid and very light acetic acid. Big sour cherry taste with light caramel, moderate tartness, some almond (pittiness), black berry and plum skins. Medium body is very soft with moderate carbonation. Pours a deep, ruby-auburn color; off-white head with fine-bubbled lacing (the head character increases further through the bottle). Very pleasant, soft aroma, showing cherry pie, slightly tart cherries, olives, and even a touch of honey-laden sweetness; mostly cherries and red fruits (strawberries) and a bit of cinnamon. Medium-to-full mouthfeel: tart cherries, brown sugar, cinnamon and cherry pie; shows some of the honey-like viscosity of Le Woody, with a much refined tart cherry and strawberry character; very solid presence of red fruits, toastiness (oak, a touch of vanilla), and funk; mild acidity adds a pleasant balance; relaxed carbonation; the prevailing cinnamon note is so pleasant, adding to the cherry pie character and a bit of spiciness. Lengthy finish, showing tart cherries and strawberries, some citrus, and toasty oak and a touch of residual honey.
