Commercial Description:
All of the sourness in the flavor comes from the process of souring the mash. To create the ideal mash for souring we doughed in at 164°f. The mash eventually stabilized at 149.5°. We then proceeded with saccrification, followed by a vorlauff to clarify the turbidity of the mash. Once the extract was clarified we brought the temperature of the mash down (using the heat exchanger) to 130°. We added a handful of unmalted wheat to the top of the mash bed and floated a "bed" of Argon gas over the mash for about a half hour, displacing the oxygen in the mash tun and creating an "inert gaseous zone," making the atmosphere anaerobic. Then we left the mash to do its thing over the weekend. We arrived to the smell of pineapples and weird esters I had never encountered in a mash tun. We then ran off the extract as usual and brewed the wort, hopping it lightly and adding some malto-dextrin and lactose to sweeten up the wort, knowing the final product would be quite sour and might need some balance. That is how we made the sour mash Brune.

Bomber @ Bill’s Sour tasting, hand labeled from deftim, Tim you rock so hard. Pours dark brown with a tan head. Nose is woody and malty. Taste is sweet and sour and woody and pretty damn nice.

Semi clear orange amber. Smell is URINE and stinky socks. Weird sour flavor of berries and feet. Gross overall - the smell makes me want to weep it is so awful

Pours lightly clear dark maroon with a short lived head. Smell is sour cheese and feet. Taste is equally as odd with sourness, funky, musty dirty cheese and a foot like flavor. Sweet cheese comes in as well. Unlike any Sour Ale I’ve had before, and I’m glad I didn’t have the entire bottle to myself. Very odd beer.

Pours a dark brown/reddish color with a short-lived Delicious sour candy aroma with loads of sour green apple, citrusy esters, a bit of cola. Huge fruity, sour candy flavors, (sour patch kids come to mind), green apples, lemon/citrus, and more COLA. I have a hard time remembering that I’m drinking "a beer" when I’m experiencing something like this--very hard not to just guzzle down in an instant. Soft, gently carbonated and velvety smooth mouthfeel. Awesome, amazingly delicious. LIQUID (SOUR) CANDY

Handbottle from brewandbbq. Pours a hazy reddish-copper color. A small, foamy, cream colored head leaves random micro-spots of lacing behind. Aromas include sour red cherries, vinous red grapes, a touch of muscat sweetness, and some red wine vinegar. The nose really opened up and became softer and less acetic as it warmed. Likewise, the flavor starts with intensely tart red cherries and grapes, with a semi-obtrusive vinegar note present throughout. As it warmed, the vinegar faded, leaving a clean, refreshingly tart, vinous flavor behind. Medium-bodied and very dry, with moderate carbonation, I found the brew to be incredibly drinkable. Very interesting, for sure. I enjoyed this quite a bit despite the vinegar notes that showed early on.

From a 22oz Bottle. Transparent, cedar brown coloed pour with a thin layer of off-white head. Aromas of nutty coconut and caramel greet the nostrils right away. Notes of vinegar, mild wood, and cherry. Fruity and sour. Light bodied, lightly carbonated mouthfeel with a moderately lactic acidity up front, with flavors that get increasingly acetic as the palate develops. Flavors of sour cherries and a moderate apple cider acetic note. Some mildly toasted malt character comes through as well as some fruity apple-laced sugars to balance the acidity. Very nice beer overall, but never develops enough complexity in the palate or finish to take it to that next level.
