Commercial Description:
Baby tree is a "quadruple" brewed with a single strain of Belgian yeast. While a commonly used style name on the internet, "quadruple" isn’t in fact a style name at all but a brand of beer produced by La Trappe in the Netherlands. Its found a common usage as a cover-all for the darkest and strongest beers produced by Trappist monks, mainly because they haven’t named them themselves. Two Belgian brewers use the term "Abt", Flemish for "Abbot". Historically the best beer made in an abbey (by the Cistercians/Trappists at least) was referred to in Latin simply as "prima melior". This has also become a brand name in recent years.Our "quadruple" benefits from the addition of 40lbs of dried California plums in the kettle - hopefully contributing to the overall dark-fruit character of the beer. It’s a dark, 8.6% beer..."Baby Tree" is Pretty Things’ first seasonal beer.

Brewed and bottled by Dann Paquette of Pretty Things Beer and Ale Project, Inc. at Buzzards Bay. Previously brewed at Paper City. Not a Paper City or Buzzards Bay brand beer.

Bomber from Capones. Mostly clear copper to ruby color with a large head. Aroma of dark fruits (plums and figs), belgian yeast, caramel malt and molasses. Malty and fruity and very sweet all around.

Tap at Barcade: Deep amber/bronze pour with a light tan film of head. Evident Belgian yeast strain in the aroma- some bubblegum esters and phenolics. A touch of sweet maple as well. Slick body with a sugary flavor. Sweet with bubblegum yeast phenolics and brown sugar maltose. A touch of drier Belgian toasted dark malts are there in the middle but it’s still one dimensional and sweet, IMO.

bottle, Poured dark amber in color with a small beige head with little lacing left on the glass. Aroma is malty, lightly sweet, dark fruits. Tastes of some light tobacco, dark fruits, lightly sweet plums. Finishes fairly dry, with a nice body. Not bad.

Poured a deep amber color with ruby highlights and a small off-white head. Spicy phenol aroma over a semi-sweet fruity malt. Touch of mint. The flavor is a mix of yeasty phenol spices, dark fruit, and tobacco leaf. Semi-sweet flavor but dries out some for the finish. Medium to full bodied.

Growler. Aroma of dark fruits, bread, light spices, caramel malt. Flavor malty but not too heavy with warming alcohol that is very much in place. Smooth and malty, not as overly sweet as most American quads. Nice stuff.

Growler from Big Z Beverage. Pours a cloudy mahogany brown with a small ring of white head. Aroma of Belgian yeast, alcohol, spices (including clove), prunes, and dark fruits. Flavor of lots of dark fruits and Belgian yeast. A decent quad, fairly drinkable. 7/4/7/4/15 [3.7/5]

On tap. This was a nice surprise. Aroma was freshly yeast, very full of Christmas spirit, and juicy. Lots and lots of raisin and prune, mingled nicely with zesty yeast spice and good dose of nose-warming alcohol. Pours a paler murky red-brown, with plenty of foamy head. Flavor was very rich and enjoyable. Brown bread, dried black figs, cream, cracker and lots of browned sugars. Plummy for sure. Lighter than a typical quad, I thought, making it feel much more like a Belgian Strong Ale, as it didn’t have the ridiculous alcohol or sugar levels. Kind of nice, to still get the intense raisin and plum without a booze and syrup assault. The yeast character was tremendous, it was crisp, clean and well balanced. Pretty Things is really getting the Belgian-style right, which is nice to see in New England (sorry Allagash).

Bottle. Pours a transparent nutty brown color with a small off white head. Nose is plums and dark fruit with a nuttiness and a light alcohol note. Palate is full and foamy with a filmy finish. Flavors of nuts and caramel, sweet bready malt notes and some dark fruit notes.
