Commercial Description:
A bottle conditioned version of Firebox with the addition of spice oils.
Pale malt, chocolate malt; Progress and Target hops; ginger, cloves, cinnamon, corriander, nutmeg, pimento. A dark, rich spicy bottle-conditioned ale, resonant with Christmas seasonal flavours and designed to take the chill off the coolest winter night. Ale Mary has a warm and sweet aroma of cloves, coriander and ginger. The palate provides touches of rum, raisins and sultanas, with a dry fruity finish. This ale has been exclusively brewed for us by Paul Davey of RCH Brewery.

Spicy aroma. Definitely ginger. Medium amber color with shards of lacing from a minimal head. Starts spicy. Ginger and coriander. Some malt, followed by dark fruit -raisin? Hard to define the finish. I suppose the spice complements the hop. Ginger all the way. Quite a complex thing.

Bottled. Sweet fruity aroma, tangerine, orange and grapes. Hazy, orange/amber color, beige head, good lace. Pretty bitter, very fruity, tangerine start but grapefruit finish, herbal, light floral. Sticky with a bitterdry finish. Not a bad beer at all but for the fruits and herbalness were unbalanced and a little over the top.

This had a decent head.Aroma was light.Nice chestnut color.Has a complex taste,but I feel they cheated by adding spices.It still was an uncommon flavor.As in the commercial description I can taste the rum and raisens.I liked that they didn’t kill the yeast as in most beers you buy.The live yeast would make this more alcoholic and bitter in time,but slowly due to keeping it cold.Good body and complex taste.Has a slightly sticky finish.Good beer.

Creamy medium white head. Chestnut brown body with strong carbonation. Powerful wooden aroma with light cloves, cinnamon, and acidic touches. Reminiscent of a lambik, but without the metallic severity. Deep, sweetish wooden acidic cloves and cinnamon taste with metallic, nutty, fruity notes. Dry wooden, spicy aftertaste. Very powerful spiciness to this one; really enjoyed that. (0.5l bottle.)

Good, dense cream-coloured and long lasting head, lace included, over quite carbonated red-foxy beer with some UFO’s. Vegetable, garden herbs, sourish to nearly astringent nose. Further spices, the only identifyable being clove. Berries (currants,quetches, mirabelles,...) too. Fruity and very spicey flavours. The clove is too powerful, too imposing, and not natural as a Weizenyeast would yield. Certain soapy flavour as well, seems amalgamated by the fruit and spices. Dry finish indeed, nearly tart. A bit oily texture, medium to well-bodied, some astringency all the same. I don’t know about this Mary, but my marie, sorry, Lut, nearly spat it out. Can’t say I’m over the moon either.

Bottle Conditioned pours a slightly hazy reddish amber with a dense white head; spicy aroma, I can pick out the cloves and ginger, but I’m less sure about the coriander; thick and rish in the mouth, dry and spicy at first, then fuller and sweet, but leaving a very dry and spicy aftertaste of nutmeg and cloves. Not something I’d go looking for again, but worth the experience

cloudy toffee color with a small off-white head. very spicy, fruity aroma of apples, spices and caramel. flavor is the same as the aroma. lightly bitter. light toffee

Bottle conditioned. Orange brown color. Vinous aroma with apple and ginger. Bitter flavor with coreander and ginger. Raisin. Long nutty bitter aftertaste. Not exactly my taste, but well made.
