Made with Vanilla Beans and Cinnamon Sticks it's a great one for the holidays! A Metheglin style mead made with Honey Base and 2 parts alfalfa honey with 1 part wildflower honey.

Medium gold with deep cinnamon and vanilla aromas. Soft wafts of honey bread emerge as it slowly opens up. Spicy cinnamon and warm vanilla bean flavors are well layered over semi-sweet honey notes from beginning to end. Lighter side of medium body, slick and smooth. A really cool blend of flavors here. Perfect for the holiday season...

This mead tastes like Christmas. It’s a hazy golden color. There is no carbonation. The aroma is of honey, pears, and cinammon. The taste reminds me of this korean after dinner drink--I can’t think of the name. The flavors they advertise are clearly present: vanilla, cinnamon, and honey, but there is also a distinct alcohol flavor and smell. The heat and warmth of the alcohol are what would make this a great drink in the winter, but it’s also what makes it something that I would not be able to have more than one glass of. At the same time it’s so distinct a taste experience I don’t think I’d really need to to satisfy this particular taste craving. For some strange reason it’s got me craving kimchi.

Clear amber. Big sweet honey aroma with hints of vanilla and cinnamon. Hugely sweet in flavor with cloying vanilla/cinnamon flavors. If the sweetness was toned down I would like much better. I certainly am no expert on the style but this is not my bag.

December 2005 bottle, from State Line Liquors (Elkton, MD). Murky yellow, with no head. Flavor is primarily sweet honey, with nice mild accents from vanilla and cinnamon. Vanilla and cinnamon are more prominent in the flavor than in the aroma. Sweet honey and alcohol in the finish. The vanilla and cinnamon work very well in this mead.

Hazy yelllow. Great nose of vanilla, brown sugar and honey. As someone else on here noted, the ciniamon does act as a sort of bittering agent. Tastes of honey, and just a little hint of vanilla. Every so often, there is a slight stale teste that reminds me of the smell of my Mom’s baking closet when I wasa kid. This is a really good Mead. Just too expensive.

hazy dark yellow, nice legs, sweet honey and vanilla aroma with a hint of cinnamon, nice sticky body, a bit thin at first but thickens as it warms, lots of rich honey flavor, lots of cinnamon, light vanilla character, light sweetness that’s well balanced by the spiced character of the cinnamon that’s as much of a bittering agent as it is a flavoring,

Beautiful cobalt blue bottle. Pours a cloudy straw color with no head and no carbonation (still mead). Pleasant aroma of honey and cinnamon, but I did not detect any vanilla. The flavor was honey, apples and cinnamon with just a hint of vanilla in the aftertaste. Warming spiced finish from the cinnamon. This would be a nice beverage to enjoy sitting in front of a fire during the Holidays. I’ll have to pick up another bottle and put it aside.

This has a clear, very pale straw body and has a smoothly blended aroma of cinnamon, vanilla, honey, and moderate alcohol. The flavor is much the same, but the vanilla beans become more dominant (I would have preferred the cinnamon) and the alcohol is more pronounced in the finish. This is my first metheglin than I’m aware of, and I really enjoyed the combination of spices. I wish it was sold closer to home.
