Made with Vanilla Beans and Cinnamon Sticks it's a great one for the holidays! A Metheglin style mead made with Honey Base and 2 parts alfalfa honey with 1 part wildflower honey.

The aroma is super sweet with lots of honey, flowers, cinnamon and a little vanilla. The appearance is hazy gold with no carbonation. The flavor is like the aroma. The palate is thin. Overall I like this one.

Sampled on 1/4/07: Pours a slightly hazy still champagne golden with light legs. Sweet, enticing cinnamon and vanilla spiced aroma reminds me of some flavored tobacco blends. Body starts fairly full and sweet with nice clover honey flavor and spiced balance. An interesting and well-brewed mead.

First mead I’ve ever had...might need to brew one now. Gold color with nice vanilla and honey nose. Taste is smooth sweet honey and vanilla....good cinnamon on the finish.

My first mead. This one had a nice golden color with a very sweet cinnamon-honey aroma. Taste was honey with just a bit of alcohol and vanilla. Tasty - not sure how this one rates with other meads, but I enjoyed it. Alcohol hits quick and unexpected though...........

It’s golden, what you would expect from mead. The smell is odd... not unpleasant. I can smell the vanilla. Very lightly sweet and feels oddly nice in my mouth. Aftertaste is light and dry. Can taste the vanilla and cinnamon. I really like it. Just makes me happy...

Light golden honey color with no head. Aroma is of sweet honey with slight vanilla notes. Flavor is sweet honey with vanilla and slight cinnamon spice.

This mead poured a clear light golden color. The aroma and flavor were very sweet. Big cinnamon and vanilla notes. Honey is definite. Big warming sensation. I can only drink a small sample of most meads in one sitting. That holds true with this one as well.

wonderfully sweet and tasty mead. medium sweet, light ochre-yellow haze from the added honey for sweetness. Great light alfalfa honey to match the spices. Strong vanilla and just enough cinnamon aroma / flavor. If you have a bottle, let it age at least 2 years...more is better.
