Made with Vanilla Beans and Cinnamon Sticks it's a great one for the holidays! A Metheglin style mead made with Honey Base and 2 parts alfalfa honey with 1 part wildflower honey.

A light golden mead. The aroma is sweet with strong notes of honey combined with medium notes of wood and a spicy note of cinnamon. The flavor is sweet with strong notes of vanilla and cinnamon as well as honey - like a pumpkin pie - a bit too much for me.

hazy dark yellow, nice legs, sweet honey and vanilla aroma with a hint of cinnamon, nice sticky body, a bit thin at first but thickens as it warms, lots of rich honey flavor, lots of cinnamon, light vanilla character, light sweetness that’s well balanced by the spiced character of the cinnamon that’s as much of a bittering agent as it is a flavoring,

500ml bottle-pours a clear head and hazy straw color. Aroma is vanilla bean and Cinnamon. Taste is strong vanilla bean, Cinnamon, honey, spice.

Sampled on 1/4/07: Pours a slightly hazy still champagne golden with light legs. Sweet, enticing cinnamon and vanilla spiced aroma reminds me of some flavored tobacco blends. Body starts fairly full and sweet with nice clover honey flavor and spiced balance. An interesting and well-brewed mead.

Tastes and smell pretty like you’d expect - honey, vanilla, cinnamon, fresh apple cider, that sort of thing. Body is thin to medium, somewhat oily. Interesting try but not something I would rave about.

This has a clear, very pale straw body and has a smoothly blended aroma of cinnamon, vanilla, honey, and moderate alcohol. The flavor is much the same, but the vanilla beans become more dominant (I would have preferred the cinnamon) and the alcohol is more pronounced in the finish. This is my first metheglin than I’m aware of, and I really enjoyed the combination of spices. I wish it was sold closer to home.

2006 Intl Mead Fest. No head (still). Body is hazy light yellow. Aroma is notes of honey, vanilla, and alcohol. Flavor is heavily sweet, moderately acidic. Finish is moderately sweet, lightly acidic. Medium body, watery texture, flat carbonation, moderately alcoholic. Pleasant, since the vanilla is very mild (didn’t find any cinnamon in my sample, though). Nice balance, pretty straightforward but well executed.

This mead poured a clear light golden color. The aroma and flavor were very sweet. Big cinnamon and vanilla notes. Honey is definite. Big warming sensation. I can only drink a small sample of most meads in one sitting. That holds true with this one as well.
