Commercial Description:
Made with Vanilla Beans and Cinnamon Sticks it's a great one for the holidays! A Metheglin style mead made with Honey Base and 2 parts alfalfa honey with 1 part wildflower honey.

A light golden mead. The aroma is sweet with strong notes of honey combined with medium notes of wood and a spicy note of cinnamon. The flavor is sweet with strong notes of vanilla and cinnamon as well as honey - like a pumpkin pie - a bit too much for me.

Sampled on 1/4/07: Pours a slightly hazy still champagne golden with light legs. Sweet, enticing cinnamon and vanilla spiced aroma reminds me of some flavored tobacco blends. Body starts fairly full and sweet with nice clover honey flavor and spiced balance. An interesting and well-brewed mead.

This has a clear, very pale straw body and has a smoothly blended aroma of cinnamon, vanilla, honey, and moderate alcohol. The flavor is much the same, but the vanilla beans become more dominant (I would have preferred the cinnamon) and the alcohol is more pronounced in the finish. This is my first <i>metheglin</i> than I’m aware of, and I really enjoyed the combination of spices. 2006 Intl Mead Fest. No head (still). Body is hazy light yellow. Aroma is notes of honey, vanilla, and alcohol. Flavor is heavily sweet, moderately acidic. Finish is moderately sweet, lightly acidic. Medium body, watery texture, flat carbonation, moderately alcoholic. Pleasant, since the vanilla is very mild (didn’t find any cinnamon in my sample, though). Nice balance, pretty straightforward but well executed.
