Commercial Description:
Made with Vanilla Beans and Cinnamon Sticks it's a great one for the holidays! A Metheglin style mead made with Honey Base and 2 parts alfalfa honey with 1 part wildflower honey.

wonderfully sweet and tasty mead. medium sweet, light ochre-yellow haze from the added honey for sweetness. Great light alfalfa honey to match the spices. Strong vanilla and just enough cinnamon aroma / flavor. If you have a bottle, let it age at least 2 years...more is better.

Tasted at the very end of a BJ’s winter warmer session. Smelled like vanilla and cinnamon rolls. Huge cinnamon, vanilla, honey, candy flavors. Alcohol warmth was there but I would never have guessed the ABV was as high at it is. Great Christmasy taste and aroma, Very tasty.

Tasted at the Back to Your Roots Party at GABF 2005. I probably killed a bottle of this to my greedy self. <P> Full aroma of honey and vanilla with only a suggestion of cinnamon. Still and headless with a shiny light golden color. Tastes AMAZING. Probably too sweet forbeer and Red Wine drinkers, but I thought this was perfection and would gladly buy many bottles of it. The honey predominates, but the other flavors are present and complimentary. Would make a great holiday treat for guests. I doubt anyone could truly dislike this and most would love it.

A New Year’s day bottle, brought to my family’s house to share. Whoah, my brother Matt didn’t realize what this was and poured himself about 10oz of it! Well, hair of the dog I guess! Intense aroma filled with cinnamon and vanilla and sweet clover honey. I took one point away because the alcohol was a bit too present in the nose. Very smooth body, coated the throat like a lozenge. Taste was sweet honey with a good amount of clover, herbs, cinnamon, vanilla, etc. This was very very good, I can’t wait to try the 2 other varieties I have in the cellar.

Medium gold with deep cinnamon and vanilla aromas. Soft wafts of honey bread emerge as it slowly opens up. Spicy cinnamon and warm vanilla bean flavors are well layered over semi-sweet honey notes from beginning to end. Lighter side of medium body, slick and smooth. A really cool blend of flavors here. Perfect for the holiday season...
