My Bottom Line:
Tranquil fruity caramel maltiness provides a clean, drinking experience which remains undernourished and storyless for the Doppelbock style.

Further Personal Perceptions:
-A slim veil of foam skirts the coppery amber.
-The Munich malt character is evident, but underdeveloped for the style.
-Alcohol nudges the back end, but never bothers.
-Had we had a Porthos right after, the Canon’s score might have dipped sharply.

This was tasted right after a best-before-1997 version of the Canon which was brewed when the company was called Brasseurs GMT. This one was obviously quite oxidized, but the toasted caramel maltiness was definitely richer than the newer version and its ensuing body and complexity were much more pleasant as well. This surely was a differently-fed beast 11-12 years ago. Merci Éric!!

Bouteille de 341 ml, acheté au Grand Duc (Longueuil, Quebec) le 18/4/08. Couleur ruby cuivrée, un peu de collet. Arome de cassonade, quelque s’épices, pas très malté. Goût de malte fumé à l’érable, un peu d’amerturme avec une petite présance d’alcool. Décevant, mais c’est RJ! Je me demande si l’original était meilleur?

(Dégusté avec french tickler) Couleur ruby-cognac, ambré-orangé, bon collet. Odeur épicé, cassonade, petit soupcon de saucisson, sirop d’érable, vanille, noix et cerises. Saveur de vanille, léger gout fumé, salé et sucré. Bonne biere!

Shared with Pyrozoid. Dark cognac poor with a small white head. Aromas of maple syrup, brown sugar, nuts, vanilla, cherries and some herbal hops. Medium body,creamy, slightly salty, good bitterness longlasting but missing a little je ne sais quoi. Flavors are mostly the same as the aromas added a little alcohol. Meh...

Bouteille de 341 ml. La bière possède une couleur cuivré avec des reflets rougeâtres. Une belle mousse au début qui laisse place à une petit collet par la suite, couvre la bière. Au nez des arômes de houblons frais, de caramel, d’épices, d’herbe, de levure, et d’alcool se font sentir. En bouche la bière a un bon corps et nous dévoiles aussi une texture crèmeuse. Les flaveurs sont l’alcool, le caramel brûlé, le malt grillé et certaines épices. Le tout se termine par un léger goût herbeux et salé.
