| 4.8 | Aroma | Appearance | Flavor | Palate | Overall | | 10/10 | 5/5 | 9/10 | 5/5 | 19/20 | Jun 23, 2009 Updated: Sep 30, 2009As you crack open the "big daddy" of the Rochefort trilogy, foam leaps out of the bottle and you’re urged to pour this hazy dark red/brown liquid of joy into your chalice. The sediment never really settles and the head is stable and thick. A vinous aroma welcomes you immediately, accompanied by dark, dried fruits, nuts, dark chocolate (no, not trail mix) and woody and caramel/vanilla overtones - no booze.
The mouthfeel is velvety smooth, full, with little carbonation, this goes down sooo smooth it’s incredible - and no booze anywhere. The flavours are of dark roasted malts, spices, coffee, chocolate (fantastic!) and almost anything you became acquainted with in the aroma. Everything is well balanced by aromatic hops, but they don’t play the leading role. The finish is long lasting, with a spicy burn, as if you’d enjoy a hot, well seasoned meal - and that’s a good thing to me. Absolutely great, wow! dnlsartin (68), Portland, Oregon, USA
| 4.4 | Aroma | Appearance | Flavor | Palate | Overall | | 8/10 | 5/5 | 8/10 | 5/5 | 18/20 | Jun 20, 2009 Pours a dark, chocolate (almost black) with a lovely head. Maple, black cherries, and pears on the nose. Prunes, molasses, brown sugar, vanilla, raisins, oak, and alcohol with a round, sweet, and lingering perfection. Subtle, distinct, diverse, and sweet. As the glass warms, so does the body. daleharshman (201), San Diego, California, USA

Pours into Chimay goblet a brown color with plum highlights. The downright noisy effervescence produces a large fluffy tan head which is quickly reduced to a thin layer. Good alcohol (bourbon?), light yeast, wood, sweet grains, dark fruits, and other stuff are present in this very complex aroma. The flavor is equally complex with wood, sweet syrup, brown sugar, raisin, light chocolate, a certain "vegetable" quality, and a host of other flavors that are hard to pin down. A little bit on the sweet side, but far far from cloying and well balanced with a small amount of bitterness. Very smooth and the high alcohol is well hidden except for that warming sensation. I almost feel like I’m still too amateur a beer drinker/rater to properly experience this very highly praised beer. Nordcore (290), North of, Norway

Nice fruity, dried fruits, sweet malty. Flavor; Sweet malty, fruits and alcohol(almost too much). F... too cold, I’ll wait few min. Aha, much better flavor! Less alcohol flavor, more and more taste! Plum and dark grapes. gerome (18), France
