Head dissappears fast, but there’s a bit less carbon than in Rochefort 8. Flavor has dark elements, such as raisin, alcohol and something fruitylike.
Taste is very full, but aftertaste is suprisingly short. Flavors include cognac, chocolate, alcohol, raisin and even vegetables.

| 4.5 | Aroma | Appearance | Flavor | Palate | Overall | | 9/10 | 4/5 | 9/10 | 5/5 | 18/20 | Feb 8, 2009 bottle from grape and gourmet poured into a snifter. pours a very fizzy dark brown with hints of ruby and a fluffy, thick beige head. aroma is amazingly complex with scents of sweet dark fruits including currants, black cherry, plum, and raisin with hints of cinnamon, coriander, and banana backed by a touch of alcohol. the aroma really develops as this beer warms. the flavor follows the great complexity of the aroma with almost too many flavors to name but plum, cherry, citrus, and spices come to the forefront. as the beer opened, i picked up flavors of red apple, nutmeg, and cinnamon with some red wine and a slightly oaked/bourbon flavor. all the flavors were in great balance and developed throughout the beer. palate was lively with high carbonation but was extremely smooth with a slight hint of alcohol and a long lasting fruit based finish. definitely a world class beer. lakersfan16 (53), Anchorage, Alaska, USA

Very strong and complex taste of dried fruit and spices, yet perfectly balanced. Great aftertaste that lingers long after the beer is gone. Bready, chocolate malt and yeast nose. Dried fruit: raisin and prune, caramel dates. Fresh fruits include plum and boysenberry. Spices of clove and pepper, compliment subtle aromas of whiskey and oak.
Flavours are full of alcohol which successfully transmit raisin, prune and overripe strawberries throughout the palate. Vinous tones seem to cling to the tongue.
Mild spices of clove and aniseed with a golden syrup sweetness.
Before and during the finish I found a bitterness of black coffee, which introduces a mellow, bready yeast.
Far too complex to describe everything, this beer is full bodied, ridiculously complex and dangerously drinkable... More? No.. They have not diverged from the traditional trappist ways and offer a rich complex beverage matched only by Westvleteren. I just drank a 1993 bottle and still believe this was their best year.
