Aroma is of dark fruits, dark sugary fruits; dried plums and raisins and lots of booooze. Flavor is just as smoothy and yummy, still the dark fruity flavors of the raisins and plums or figs, nice smooth sweetness to counteract the booziness but still has that heat with a lil spice. Brown sugar and some Belgian yeast abound. First Taste is a shock of brown sugar and yeast, some booze follows. Slightly effervescent. The fruit is mostly plum and raisin, very vinous in nature. The carbonation is excellent. The small bubble tingle. The alcohol content is masked with the combination of flavors, but is present when you breath in the beer over your tounge.

This was an awesome beer. From the pour which was dark brown color with a nice creamy head with lots of lace left in the glass. The aroma was bold with plenty of malt. Murky mahogany appearance; clouded by bottle yeasts but who care? I was happy to HAVE those yeasts! Great head! Impeccable balance and ’CLASSIC’ Belgian notes. Nuances of dried stone fruits, chocolate. Deep malty background with distinguished fruity ester notes in aroma! Outstanding! I cooked my first Belgian dinner which included a Flemish beef stew which we savored with the full flight of Chimay and three Belgian cheeses (two of which were Chimays)! Malt, cherries and pear on the nose complimented a beautiful milk chocolate (think Hershey’s) appearnce with a medium tan head. Huge malt coats the palate and tones of cherries, pears, bananas and malts were perceived. Overall a great one-of-a-kind beer that I only wish I could drink daily! Pours medium chocolate brown with dense, tight bubbled foam head - tan in color. Aromas of candied fruit, slight banana (like Bananas Foster dessert) and strong malt aromas. Tasted for a second time courtesy of Fistfull’s generous $45.00 six pack comprised of the whole flight of Trappistes Rochefort - 2 bottles of each! Better his coin then mine - good to marry into the family (I hope he’s not reading this...). Flavors of chocolate malt, honey cake and dried fruits. Overall, one of the best beers ever experienced! ’Nuff said.
