Commercial Description:
The top product from the Rochefort Trappist brewery. Dark color, full and very impressive taste. Strong plum, raisin, and black currant palate, with ascending notes of vinousness and other complexities.

Purchased 3 yrs ago - 1st rainy day seemed like a good day for this. Pours a gorgeous deep deep mahogany with garnet highlights and a fluffy long lasting tan head leaving nice lace on the glass. First thing I noticed is the big hiss on opening .. the yeast have been working Nose: Plum, figs, some licorice, bready notes along with white pepper and way way deep in the background is a whiff of alcohol along with a touch of old ale like vinous qualities. Taste: Lots of rich malt notes including caramel dark fruits and tons of spicy notes leaning towards white pepper. For the malt complexity this beer finishes dry. The palate is a little overwhelmed by the carbonic bite and the hugely warming alcohol Mouthfeel: The higher than expected carbonation makes the beer more dry than expected and does not have a luxuriating finish which the nose hinted Overall: Stuff of legends in the nose (with a such a big alcohol % hidden so well) maybe my bottle got over carbonated. The taste complexity was there but the high carbonation was a quite distracting. Once I drove out the CO2 the magic - maybe my bottle was slightly over carbonated. While the huge alcohol makes this a sipper the rich flavors and super dry finish make the sips closer (Caveat: The floor can get uneven very quickly)

Bottle from The Trappist. Pours a thick brown with beige head; fluffy but stays for some time. Aroma has notes of raisins, bananas and figs. Flavor is sweet but finishes dry. Excellent Quad!

Pours a dark maroon with an off-white head and nice lacing. Fruity nose. Taste of raisin, banana, pear, and plum. Notes of molasses. Alcohol is astoundingly well hidden, virtually no notes of alcohol in the taste. Thick full-bodied mouth feel. Sweet, fruity finish.

Smells a bit bready but also a bit like something that was stored in plastic too long...?? Quite dark, nice head and lacing, not really black or able to see particles though, just dark. Big bold bread and malt flavour. The biggest part is at the mid palate and the aftertaste, it fades away nicely. Very nice, though as I drink more I can taste that extra alcohal, maybe a lesser one would be better for a regular drink.

Pours almost black with a thick creamy off-white head. Aroma of earth, basement, raisins, dark chocolate and even a hint of red wine. Very warm full bodied sweet flavor of raisins, plum, and spices. Very long lingering bittersweet finish that has my mouth tingling. I really like this fabulous beer.

Aroma of black pepper and earth tones. Reminds me of a dark cellar. Very nice. Reddish/copper in color with a very thin head that lingers. Great mouthfeel with a lightly bitter aftertaste. Very complex in flavor but awesome with earthly grains, fruit and a nice hop kick. Very warming. Great beer.

Those priests do know what it is all about. I was somewhat anxious for this one, because the other two Rocheforts had impressed me quite a bunch. Well, the older sibling gets along with the family. It poured dark, blurish brown with a fine forming and lasting beige head. Some uniform carbonation at the bottom. The aroma flew into me right at the opening (as did Rochefort 6’s aroma) with pomegranate, plum, some raisins, oat, wheat, bread and a few dried dark fruits. As I turned it into my mouth, the strong licorous taste, such as a ruby wine, got all over my mouth with no shame of the alcohol it beared. Berries, wood, some clove, little banana, fading coriander and a hole lot of raisin and dark dried fruits sweetness. The bitterness came up slowly and fading with the aftertaste. Altough it is unbalanced to the sweet, it only bothers in higher temperatures. This beer must be drank at the right temperature - if its lower, the alcohol comes ou too much, if its higher, theres too much sugar. But, at the right temperature, the right aromas and tastes flourish grealty. Amen.

bottle - pours dark brown with tan fizzy head, very lively. The aroma is chock full of spice, raisin, plum and a slight trace of alcohol, this is followed by a bit of earth, leather, fruitcake, caramel and brown sugar (not necessarily in that order ;) ) The flavor was sweet, nutty, spice bread and raisin with the warm alcohol feeling spreading as it went down (maybe just a tad too much). Excellent beer....
