Complex nose of roasted malts (milk chocolate, caramel) blue grape jelly nose and yeasty. As others have pointed out, superb balance, cannot tell wether it is more sweet or more bitter. How: Many bottles, various years, various aging.
The look: Reddish-brown body with a small but long-lasting tan head
In long: Gotta love that trappist yeast. Slender but doughy body. Very smooth and chewy. Only moderately sweet. Manages to stay rather dry despite the rich maltiness thanks to some trappist magic. More and more fruity notes (berries and even bananas) join the nutty and woody flavours as the beer warms up. An overall wet earthy feeling. Minimal citric hops presence. Scarily too easy to drink. Although very good this is the weak link of the Rochefort family. The 8 and the 10 are masterpieces of their respective genres. The 6 is a superior Dubbel but not quite up there the best of them like a Westmall Dubbel or even a Lost and Found. Sweet aroma in the nose followed up with first taste. Sweet in a sugary caramel way. Sweetness hides alcohol pretty well. Little soft for me.
