Served lightly chilled in chalice.
Pours pretty much perfectly! Dense rocky pale tan head atop a murky, effervescent, chunk-laden, deep mahogany body.
Interesting and deeply complex nose; plenty of earthy spice in the foreground, clove, cinnamon, pepper, possibly even nutmeg! Has a citrus zestiness about it, a tobacco leafiness too, leading onto more malt driven aromatics of brown sugar and bread/cookie dough. Faint vinous red/black fruits emerge with warmth.
Lucious velvet-like texture, length is very good maybe not as much as the 10, low creamy carbonation. Body dries out eventually but very well hidden alcohol.
Fruit cake-like body, with all of the trimmings! Brown sugar, dough, almonds, clove and cinamon, brandy, sultana, dark cherries and blackberry, a bit of lime and bitter citrus rind seems to lift the palate. Goes down warming, somehow the alcohol alludes all other perception. Lingering dryness with a mishmash of flavours once again reminding me of fruit cake.
Once again a ridiculously complex beer from those crazy monks at Rochefort. Definately need this one to breath and warm up a bit before tasting, it smooths out and becomes far more coherent...and delicious. ZazuH (42), Brentwood, California, USA

Lively carbonation kept head around for some time. Due to a lousy, pour, had lots of large yeast particles. Aroma primarily phenolic (cinnamon, clove, allspice) w/ a hint of apple. Malt is toasty w/ hops lending a peppery earthiness. Finishes w/ green apple. Slightly metallic. Fizz adds a little harshness to the warming alcohol. Rather crisp and finishes on the drier side. Layers and layers of flavor, chocolate, nuts, dried fruits, and a touch of licorice. Finishes with an alcohol tinged yeastiness. The finish is nice and long and very warming. Great for a cold night!
