Poured with all yeast into a Rochefort glass a beautiful Ruby Red with active swirling yeast. Medium sized bubbly head quickly dissipates to cling to the rim. Murky earth brown pour with a heavy building carbonation to lift up a finger of pillowy smooth whitish-tan head with lasting retention and mild collapsing lacing that holds the glass longer than the center of the head. Aromas of alcohol soaked prunes, cherries, plums, candi sugar, dark pit fruits and dark mahogany and cherry wood highlights. A light body of maltiness highlighted by candi sugar and hints of cherries. Very sweet finish with hints of smoothing yeastiness and vanilla. Retains the bodyand feel but with slightly less taste complexity than the 10, while I feel like the Westy 8 loses too much body along with complexity compared to the 12. Rarely do I focus so consistently on this, but I just don’t know how those Trappists manage to get the heft and fullness of an IPA in a Belgian strong like this.
