Commercial Description:
"INFUSCO" was inspired by a unique yeast's ability to gently weave character and flavor into the beers it ferments. A sweet body balanced with a big alcohol warmth and a touch of hops. Lingering rich flavors add to the complexity. Try aging this one for a year or two at cellar temperatures and compare the flavors that will emerge. For a "SLOW" experience pair this with smoked cheese, baked whole grain crackers, blackened peppercorn rib eye steaks, rich dark chocolate, hazelnut crepes or a fresh dark wrapped maduro cigar.

Poured dark brown with small fizzy tan head. Nose is drum tobacco, char, alcohol, and a bit of smoke and overlying sweetness. Flavor is more tobacco and sweet unbalanced alcohol. I don’t think I finished all of this one.

65clbott@Strasbourg Mondial de la Biere. Spicy faint caramel nose. Deep orange in color, non filtered. Plastic, caramel, honey and some hops in taste, choccolate and coffe as well Medium bodied

Brown coloured beer with small off-white head and no carbonation visible. Mint aroma with some malty touches. Full creamy palate. Finish is smokey roasted nicely balanced with some bitter touches ending slightly dry.

Yuck. Actually poured this one out (and it takes a lot for me to actually pour out a brew). Funky aroma of dark fruit, smoke, black pepper, and lemonzest. Flavor is sweet, sour, and peppery...lots of chocolate and tobacco with a weird lactic sourness. Very thin body with little carbonation and visually similar to murky pond water. Avoid!!!

The appearance is deep red-black. Tall rocky head. In the light it takes on a deep purple. Opaque. The smell is a very smoky initial aroma wafting. Dark grainy sour(-ish) malt. Dark grapes. Dark and rich and comiplex all around. The taste is grainy dark toasted barley, topped with heavy smoky BBQ. Ends like a dark, dark ale; like a dark Belgian ale with a sour(-ish) barleywine flavor. Raisins, plums. The feel is thick but very dry on the tongue. Terrific dry red wine feel. I like this beer despite that it’s sooo dark and wine-like. Pretty good.

Dark candi sugar and spice notes are prominent. Pours a dark brown with nice head.

Bomber. Pours a deep dark caramel amber - almost brown with a big tight lasting head. Aroma is nutty soy oxidation (bottled May 2007, lgith fruits and a peppery belgian yeastiness- slight dough and cracker with some toffee and molassess sweet hints over the oxidation. Flavor has a bit more of a cardboard malt oxidation- sharp and long drawn out brown malts, old special B dark sharp crystal faded out by now- some phenolic yeastiness, light toasted malts, some nuts and light chocolate, with just hints of slow roast and light char and smoke- gets a bit leathery and slight old apple skins. Finish is a bit papery and rough. A bit too old.

Pours a dark brown with a nice brown head. Aroma is smoke, dark malts, wood. Flavor is smoke, fruits, wood, barley, dark malts, peat, tobacco, esthers. Bitter metallic herbal funky finish. Strange brew. Really strange. I think I see what the brewer was going for here. A few tweaks to the recipe and this could be amazing, but as it stands it’s quite flawed.
