It has a murky brown body with a small head that vanished completely within seconds of the pouring. The aroma is strong with Bourbon and dark stone fruits with a touch of caramel and a subtle spiciness. The flavor is boozey and plummy and has some caramel, figs & prunes, vanilla, and wood. Very enjoyable sipper from brewmaster Iain Wilson.

| 3.5 | Aroma | Appearance | Flavor | Palate | Overall | | 8/10 | 3/5 | 7/10 | 3/5 | 14/20 | Oct 19, 2009 Sampled on tap at the brewpub (Orland Park, IL). Pours a murky amber, hazed with small offwhite head. Dies to next to nothing. Aromas are heavy boozy bourbon, vanilla, wet oak, as this beer is a little intimidating. Trace elements of the Dubbel underneath with faint candi sugar, minimal if any Belgian yeast (and I do remember the base recipe). Initial is surprisingly more balanced than anticipated. Vanilla, bourbon, and wet soft wood with a touch of candy sugar, faint fruity apple, and minimal if any spice. The barrel definitely took this beer over, but I still enjoy it. Warming finish, a bit boozy with vanilla and light booziness. Lighter on body, somewhere on the lighter side of medium, as the barrel took a good amount away. msante79 (822), Orland Hills, Illinois, USA
| 3.1 | Aroma | Appearance | Flavor | Palate | Overall | | 7/10 | 3/5 | 6/10 | 3/5 | 12/20 | Oct 15, 2009 Served in goblet at brewpub. Pours dark brown with very small head. Aroma is very heavy on bourbon and booze with some oak, vanilla, and caramel. Flavor is dominated by overpowering bourbon and booze with oak, vanilla, caramel, and some bready malts. The barrel really overpowered this beer. Mouthfeel is sticky and syrupy with light carbonation. Kind of a boozy mess.
