Musty apple and earth nose. Crusty pastries and cheeses, brown spices and tart alcohol presence. First flavor is a bogged down bran and oatmeal graininess, lilting lazily into a hot acidity of white wine and dulled lactic acid. Acidity is very sharp and brisk, but seems somewhat polished off in an atypical way with less balsamic and acetic acid and more heavily concentrated pear and lemon juice. More searing with ripe sourness and alcohol in the mid palate; texture is soft and acidic as a fairly syrupy white wine, with a peppery, somewhat foul alcoholic finish. Some residual, clinging sweetness of honey and white grapes. Though friendly and simple, it seems stripped down in some vague and hard to describe way, and a bit lifeless somehow. Lesser notes of tart cherry. Plenty of wet wood. Some phenolic hotness. Pleasant for sure. Deeper and warmer sniffs reveal a fairly large bready and malty base that initially hides behind the tartness. Pours a nearly still light copper with gold accents. Quite pretty actually. Flavor is quite odd. Bready, cracker malt at first with an abrasive sourness on the back of the tongue and all the way down the throat. Wood tannin throughout. Very acidic on the finish. The aroma is sour with notes of rye, fruit and malt. The flavour is sourish with light notes of vinegar, rye, fruit and malt. I know a lot like this very much. Realesing this bottle from its wooden presentation and white wrapping paper builds up a sense of expectation that is met in every detail. Zero head and a beautiful congnac colour. Aromas of young apples, oak and honey - reminds me of a big fat US chardonnay. Flavours of cloudberries and acidic cider. 10% ABV - where is it? Light, delicate and spectacular beer.
