Commercial Description:
Although we enjoyed aging Batch #1 in used La Folie barrels from New Belgium Brewery, one of which was the renowned PH1 barrel, Batch #2 is something completely different. After a trip to Belgium in 2006, Vinnie successfully tried his hand at spontaneous fermentation using traditional, and not so traditional, Lambic methods. Out of respect for our Belgian brewing friends, we call this style “Sonambic”, a portmanteau between Sonoma and Lambic.

We stole this term from our friend Brian Hunt at Moonlight, our local farmhouse brewery. In 2007, we executed a second spontaneous fermentation, making yet another batch of Sonambic. This year, we blended those two batches to create our second bottling of Beatification which we are very excited about! Batch #2 has a big grapefruit aroma and grapefruit rind flavor with funky Brettanomyces and a tart finish.

Bottle from brewery. Clear golden with a fizzy white head. Sour green apple and pear aroma and taste with a nice silky champagne like mouthfeel and tart and tangy fruit notes through out.

bottle thanks to Mentor (BA). Pours a cloudy faded orange-yellow with a very thin white head. Nose is of sour vinegar. Taste is of sour grapefruit. Very sour. Mouth-puckering sour mouthfeel. Would have prefrerred more flavor and not just sourness. Hard to make out any flavors other than grapefruit because of the overpowering sourness. Not my deal.

750 ml bottle. A cloudy and muddy deep amber beer with a medium sized, creamy and persistent white head. Very nice aroma, harmonious, with notes fruits, spices and wood, Moderately hoppy nose, more than usual for a Christmas beer. The flavour is moderately sweet, with a light acidity and has some orange and citric notes and other fruits and spices hard to describe. Medium body, lively carbonation, quite long finish with medium clean bitterness, not abrasive. Rather unusual Christmas beer, light and hoppy, though at the same time complex and warming. Very, very nice.

Bottle. Rating 1000. This has sat in the cellar waiting for this moment for a long time. Pours a dingy orange with strong aromas of tart citrus (lemon and grapefruit) and a bit of sweet fruit like apricot. Also a bit of grass and funk. Flavor is incredibly tart and sour... a lovely mix of lemon and grapefruit dominate flavor and aftertaste. Flavor is full and robust, especially for a lambic/sour/sonambic. There is little subtlety, but a smash in the face of sour. Lovely and much anticipated.

Thanks JoeMcphee for the bottle. Very strong aroma of citrus, lemon and grapefruit all creating sour impression. Golden yellow haze with a great frothy white head. Medium carbonation. Strong sour flavour which is not to my taste, it seems to have a thin texture. Grapefruit just explodes from this beer, its like bitter lemons and sherbet or some fizzy gums. Tangy sweet finish like a sparkling cider. Sharp to the core. All sounds great but Im not feeling it.

[batch 3] Hazy yellow/golden color. Very interesting foam- thin and chunky. Aroma is very powerful: pineapples and loads of fruity esters. Almost perfume-like. Flavor is full of funk and fruit. Green apples, pear and grapefruit. Citrusy, sharp acidic character. Very complex and drying finish, making you really keep chugging this things down. Definitely on-par with traditional Belgian Lambic beers. Outstanding!
