Style: Saison finished with Brettanomyces
Tasting Notes: Golden in color, strong yeast aroma with mild aromas of barnyard and leather from the Brettanomyces. Flavor’s of malt and spice dominate the palate with a dry nutty (malt) character mixed with a funky Brettanomyces finish. The hops are dominate but well placed with-in the brew.

Publication started out as a test beer we called Empirical 7 which was a blonde ale fermented with a Saison yeast I wanted to test out for the PNC beer. The Empirical 7 was extremely hoppy and very very dry and the use of Brett for keg conditioning was very heavy handed. The Empirical 7 was meant to be a test batch for the members of the PNC to taste and based on their feedback I would build the recipe for the first ever PNC beer. At about midnight the night before the brew, over a game of Washoe’s and 10 beers into the night we finally got around to talking about the beer. A higher ABV was requested with more characteristics from the yeast and fermentation were also wanted in the PNC beer. With that in mind I set out to tweak the test batch and brew the next day. In the end I did bump up the malt bill so we could reach an ABV of 8%. I also switched out some of the base 2-row malt for some pilsner malt which would add another dimension with the malt characteristic in the beer. We used the same hop bill as the test batch so with a higher ABV and more malt on the palate the hops would be a little less aggressive. In fermentation we fermented about 6 degrees warmer to get more yeast characteristic in the final beer. Once the beer was ready to keg we used a smaller amount of Brett so there would be more flavor from the fermentation coming through. At a young age, this beer drinks very well, but, there are still some rough edges which will round out nicely as the beer ages.

Draft at Monk’s in Philly, before game 3 of the series. I figured this would be rated super high. Probably a case of overrating due to rarity. Don’t get me wrong, a really good saison, but not head and shoulders above others I’ve had.

What a delicious beer to savor. This is my introduction to the unique yeast used in this brew. It’s was a slightly hazy golden amber color with plenty of yeasty, spiced bread aroma. Hints of banana and yeast go down easy with the ultra smooth body. Just what I want when sitting by the fire with a good book.

Draught Poured pale yellow/orange with thick withe head. Aroma of spice and malt. Lekker light spicey flavour (actually my notes say LEKKER! LEKKER! LEKKER!" Wild yeasty finish. Seek this one out, you won’t be disappointed.

Pleasure to have on tap at Brouwer’s. Pours clean, bright yellow with a touch of haze. Nose is bright and bretty, taste is warming and full. Mellow saison but perfect sour-tart brett finish.

Same keg Ken drank out of at Toronado.... Appearance: Pours a clear gold with a 1/4 inch of foamy head. Aroma: Vanilla, banana, honey suckle and flowers. Taste: Brett, honey, banana, finishes with a slightly sour twang. Mouthfeel: Moderately fizzy, soft and almost creamy. Overall: Tasty, sweet and inviting.

Draft @ Toronado. Pours a slightly hazy, honey-golden color; mostly headless, or quickly dissipates. Just a touch of butterscotch in the aroma; honey, light brett character; on the sweet side; this really does seem slightly buttery, and while I appreciate that Toronado’s made this keg last, it may not be in the best shape right now; still, pleasant. Medium-to-full mouthfeel: average carbonation; lots of candy sugar, Belgian sugars, biscuity malts and a nice mineral bitterness; lightly sweet, but the butter notes don’t follow through from the nose; plenty of honey without being heavy. Lasting mineral bitterness, biscuity; moderately dry.

On tap at Monk’s Cafe in Philly, PA. Pours a lightly hazed, golden colored body with a dense, white, two-finger width head that dissipates slowly and leaves a good amount of lacing. Aroma is grassy and hay hops with a distinct spicy yeastiness. Slight brett notes with a good amount of fruit and a light pepper. Pale malt sweetness holds this together. Flavor is malt forward at first with a grassy, Belgian yeast fruitiness, and a spicy finish. Slightly funky brett, a little dough, almost tart fruit, and a dash of pepper. Dry and crisp with lots of lingering hops, spiced yeast, and a light sweetness. Medium to full bodied, smooth, and well balanced for such a hoppy and spice filled beer. Overall, a very tasty saison. Nice balance and round body made this quite enjoyable. Good one.

A: Poured on-tap at Bottleworks. Small, off-white head that diminished to a 1/4-finger or so. Body is a nice, dark yellow color, and quite hazy/cloudy. S: Nice aroma... some fruits and spices coming through, but it was a little hard to put my finger on it at the time. Definitely some sourness in there as well... enjoyable. T: Very original; starts off sweet and fruity, with a tangy, sour finish. The alcohol is hidden extremely well; maybe a slight warmth at the end, but that’s it. M: Very creamy with a medium-body, and average carbonation. D: I couldn’t have more than one of these in a night, but it’s a great beer to sip on. Gotta love Russian River.

Aroma: Sour aroma with strong alcohol lingering. Big Beer
Appearance: Golden in color, clear with a thin head.
Flavor: Light flavor spicy with fruity esque.
Palate: Dry with a smooth tart finish.
Overall: Interesting brew with a great tart and fruit flavor/aromas. Light with lots of alcohol.
