Nose- sweet white grapes, lemon rinds. Taste- champagne like carbonation, blast of white grape sharpness and green apple sourness. Has a wood/ mineral like dryness to the finish. Overview: Batch 003 Pours golden with light white head. Aroma is oak and grapes like a white wine more than beer. Flavor is sour but well balanced with the oak and doesn’t make you pucker after you drink. Finish is oak and sour but not lingering too long. The aroma is a bit oaky, light notes of alcohol, fruity with a bt of sourness. The flavour is again a bit oaky, some citrus, yeast, white grape skins, acidic with some light alcohol. Sweet and dry mouthfeel, medium body, medium carbonation. Finishes lingering and lightly sour.
Quite smooth and the sourness is very well balanced. I can see this aging quite well. I feel that I need more of this and I have both batch 1 and 3 so more samples are in order.

Poured a cloudy, pale golden-straw color with a moderate off-white head that clung to the glass nicely. Aroma of soft yeastiness with some light citrus including apricot and mango, and a soft wine-like oak funk. Sweet, lightly tart entry leads into a moderate yeastiness with some barnyard funk and undertones of soft citrus fruit, finishing lightly sour with some yeast and oak in the finish. Lovely bright cloudy golden pour with pillowy white head. Nose gave more more oak than funk... and overall, that was the relative disappointment for me. Sour, but overall more woody than anything else. Oak was huge, with notes of citrus and chardonnay; quite lovely, but damn if it was really worth the rarity and cost. Amazing mouthfeel.
