Commercial Description:
Is it beer, or is it wine? "Aged in French oak wine barrels for twelve months with distinct characteristics of fruit and subtle oak" sounds more like a description of wine than beer. But, of course, Temptation is indeed beer. Actually, Temptation is a Blonde Ale Fermented with a special strain of yeast, then aged in French oak chardonnay barrels. Flavors of wine and oak absorb into the brew throughout twelve months of aging. During this aging process, a secondary fermentation occurs using a yeast strain disliked by most brewers and winemakers called Brettanomyces. The "Bret" gives Temptation intriguing characteristics and a pleasant sourness. Temptation is re-fermented in the bottle to create its carbonation--a process commonly used to make fine champagne and sparkling wine. Spent yeast forms a thin layer of sediment to remain in the bottle.

Caged and corked 375 courtesy of pantanap. Thanks a bunch Kan. Pours a deep golden color, mostly opaque, with a medium large white head that slowly deflates. Loads of funky brett aromas. Light acid, leather, old books, rice wine vinegar. Starts off much sweeter than I had anticipated, with light caramel notes. Texture is gorgeous, lively small carbonation, but nothing overbearing. Light sourness, gentle, not bracing. Lots of subtlety here.

Powerful tart sour dry aroma, jumps out of the glass. Hazy gold, strong white head. Reminds me of gauze, both dry and soft, nearly medicinal. I had forgotten about the chardonnay barrels and probably would have noticed it had I looked for it. It doesn’t swirl with complexity but it’s a great beer that I couldn’t drink slowly.

Pours cloudy gold, with a white head. Aromas are sour fruit and white wine. Flavors are fruit, white wine, and yeast. Slightly sour and tart, but in no way overpowering. A nice mix/balance between a strong and sour ale. Highly enjoyable.

Batch 01 - Super beautiful deep golden body with very fine sparkles and a huge thick VERY beautiful white head leaving thick patches of lacing, more then perfect; Alright but not fantastic nose, it is not super big and should be elegant to fit its size, but instead it is quite oaky fat and only with a very little viney acidy freshness; Not big enough body with a big soft carbonation, bitter slightly lactic but again a little to fat; It surely grows in finish, a small lactic harsh bite, slight brett hay, horsey and apple aromas, again it is to oaky fat and maybe even a bit yeasty fat; Very RR and by this I man very good but lacking a little in almost every aspect to be perfect.

Beer pours cloudy, golden honey color with a well retained egg white colored head. Aroms is lightly sour with wonderful yeastiness, cobwebs and a bit of white wine aroma. Flavors are of light fruit, nice yeast and some wet wood. Mouthfeel is very smoth and well carbonated. Excellent.

Bottle, batch 003. Gold / orange pour with nice white head. Aroma is woody, some white wine, mild funk / brett. Flavor is the same, tart overall, citrusy with some sweetness also. I like these sour beers when it’s hot out.

From Bottle, Batch 001 and Batch 002. Extremely difficult to pour because the amount of fermentation that erupted from the bottle upon opening it was ridiculous. When it finally settled in my glass, it was a transaparant apple juice color with a thick, tightly bubbled, borderline creamy looking, white head. Green apple rinds, pineapple, and lemon blend together in an acidic, farmhouse funky bouquet. A sublty sweet pear and apple toffee aroma also wafts from beneath. Very acidic initial burn on the tongue, but it then develops into the creamy, yogurty, vinous goodness that is a testament to this unique craftsmanship. Clean, oaky finish. Exceptionally dry, and brilliantly layered in oak, grape, and funky brett complexities.

Smells like chardonnay meets bret. So delicate and lively it is as if the angels are peeing on your tongue. Soft white fruit and candy come thru with the amazing sour character that can make a grown man cry.
