Commercial Description:
Our Divine Reserve is a series of single batch beers, each brewed with a completely different recipe. The batches are identified by the number on the neck label. There is no particular theme to the beers, although it can be assumed that most all of them will be big. Many will benefit from being aged. Reserve No. 1: Barleywine Cases Made: 327 Date Brewed: August 18, 2005 Date Bottled: October 17, 2005 Original Gravity: 1.099 Final Gravity: 1.027 Alcohol: 9.3% ABV This big, barleywine was brewed with pale Maris Otter malt as a base. This was supplemented with Munich and Chocolate malts which gave the beer a very chocolatey flavor in the fermenter although it rounded out considerably by the time it was bottled. It was heavily hopped in both the kettle (with Northern Brewer and Cascades) and in the fermenter (with Saaz). When tasted in the fermenter, the hops were very aggressive but after two months of aging, they mellowed. The beer was fermented at 72 F with our Saint Arnold yeast giving the beer a full, creamy mouthfeel with pleasant fruit. This batch was unfiltered which, combined with the high protein Maris Otter malt, makes for a very hazy beer. The first few cases were packaged without an in-line hop filter which resulted in some hop particulate in those bottles. After about 30 cases (and the bottling line being gummed up), we put the hop filter in-line. This filter is very loose and only removes hop bits. While this beer is ready to be enjoyed immediately, it should develop well in the bottle over time.

Someone from the western states sent me this either as a Secret Santa or a bonus. I’ve lost track but thanks whomever it was. I am now looking forward to the other two Divine Reserve releases that I have awaiting their fate in the cellar. Hopefully they live up to the standard set by this.

Aroma / Appearance - The tan head and deep ruby body contrasted against the setting sun. A sheen of clear lacing made it clear this was not light on the alcohol. Semi-bitter chocolate, rye, and molasses gave it a profile almost like an old ale (which I suppose an aged barleywine could be considered).

Flavor / Palate - Fluid and persistent this reminds you that you are not skimping on taste. Sitting on throat it leaves caramel, molasses, a drop of ethanol, and the faintest of old hops. Not having tried it fresh I have no reference point but I can’t imagine it will improve any more.

Courtesy of Lumpy. Brown with a light tan head. Roasted nut and caramel aromas. smootn medium body. Flavor mirrors aroma with rich roasty malts and a sharp caramel sweetness, with a little heat to finish.

Bottle thanks to Lumpy. Nose is dark fruits, raisins, mint sprigs, and thick fudge. Taste is mostly dark chocolate fudge and well as caramel, and dates. Mouthfeel is syrupy smooth and silky. Mouth coasting and medium to long finish. This has aged pretty well.

Bottle thanks to Lumpy via ilovedarkbeer. Pours a dark brown with off-white head. Aroma of dark fruit, alcohol, hints of caramel, sweet. Flavor of dark fruit, some caramel, alcohol. Mouth feel is heavy body with low-medium carbonation. Overall, Good Stuff!!!!

The last of the Divine Reserve’s courtesy of Lumpy. Pours with small, off-white head that fades over a dark, amber brown body. Aroma of toffee, alcohol, sherry, caramel, dark fruits and nougat. Very nice aroma. Taste is dark fruits, raisins, caramel, soot and currant. Silky mouthfeel and slightly warming.

Cloudy dark amber with medium beige head. Sweet aroma with toasted malt, caramel and ripe fruits. Sweet flavour with toasted malt, caramel, ripe fruits and hoppy notes. Bitter finish.

12oz bottle from biz82, thanks Josh. Dark murky brown pour with a small white head. Huge malt nose, lots of dark fruits. Goes down smooth, pretty mellow, nice maltiness, more dark fruits, dried prunes. Good.
