Commercial Description:
Our Divine Reserve is a series of single batch beers, each brewed with a completely different recipe. The batches are identified by the number on the neck label. There is no particular theme to the beers, although it can be assumed that most all of them will be big. Many will benefit from being aged. Reserve No. 1: Barleywine Cases Made: 327 Date Brewed: August 18, 2005 Date Bottled: October 17, 2005 Original Gravity: 1.099 Final Gravity: 1.027 Alcohol: 9.3% ABV This big, barleywine was brewed with pale Maris Otter malt as a base. This was supplemented with Munich and Chocolate malts which gave the beer a very chocolatey flavor in the fermenter although it rounded out considerably by the time it was bottled. It was heavily hopped in both the kettle (with Northern Brewer and Cascades) and in the fermenter (with Saaz). When tasted in the fermenter, the hops were very aggressive but after two months of aging, they mellowed. The beer was fermented at 72 F with our Saint Arnold yeast giving the beer a full, creamy mouthfeel with pleasant fruit. This batch was unfiltered which, combined with the high protein Maris Otter malt, makes for a very hazy beer. The first few cases were packaged without an in-line hop filter which resulted in some hop particulate in those bottles. After about 30 cases (and the bottling line being gummed up), we put the hop filter in-line. This filter is very loose and only removes hop bits. While this beer is ready to be enjoyed immediately, it should develop well in the bottle over time.

Bottled. Poured a deep, murky brown with little apparent carbonation and nothing doing for head. The aroma picked up a delightful blend of dark, aged fruits with drawn caramel behind.. great caramelization and a hint of earthy hoppage remaining. The flavor carried through the caramel and fruit with building peppery spices and alcohol warmth as it progressed.. the middle found sticky molasses to complement the caramel.. long, warm finish. Heavier-bodied with low carbonation, allowing this to roll slowly over the palate.. nicely toasted and deliberate.. just an excellent brew all around! I’d buy a re-release.

bottle thanks to biz82. very deep brown color with no head just a very thin head ring. nice thickness and there are still some hops that are quite noticeable. very bitter taste but it’s good and thick and the hops make this beer totally worth it.

Thanks to lb4lb for this treat of a brew! The pour is really nice looking. Dark and murkey with definite plum coloring too. Very small head ringing the glass. Shit, aroma is great too! Overipe Dark fruit, caramel. Flavor is still bitter with a little sweetness sneaking in the middle. Pretty dry finish. Very good beer that held up nicely. Thanks Deniz!

2-3-08 bottle shared at tasting - yippee
Delightful caramel amber colored pour with a nice head which bubbles from the bottom up. Smells like wood. I could be more detailed but this is essentially what it really boils down to for me. Almost like oak planks that are being smoked. Has a sweet enjoyable barley flavor and a creamy, dense palate. A bit muted flavor-wise but very good overall. Really glad we got to try this one!

Bottle shared by chadspivey. Rich chocolately, caramel color and a yellowish, beige head atop. Fresh caramelly scent and an almost bright lemony hint to accompany. Taste is very smooth, easy drinking and I got an almost oaky, drying flavor out of it as well. This has stood up well over time, and was a great barley wine, I thought. Glad to have been able to try it, and wish more were available.

hazy dark red, fine beige head, dark caramel malt aroma with lots of earthy character, light initial fusel alcohol fades to leave a brown sugar sweetness, rich caramel malt flavor, touch of chocolate, lots of earthy hops keep it balanced and almost dry, touch of fruity character brings in a bit of sweetness, lots of back and forth conflict between the sweet caramel and fruit and the huge earthy bitterness,

(12oz bottle, thanks kmweaver) Small tan head atop cloudy mahogany body. Aroma is moderately sweet, caramel, fig, Cognac, some smoke. Taste is moderately sweet, caramel, fig/plum, some alcohol. Medium-full body, low carbonation. At the very least, the aroma is divine.

Bottle shared by kmweaver. Cloudy/murky dark burgundy brown with a tan head. Nose is a big, malty, slightly oxidized plum, wood and cherry malt mixture, with notes of old, overripe, woody oranges as well. Rough and heavy on the palate, hoppy and moderately bitter but balanced well with some extremely chewy malt. Reminds me of a heavy old ale, actually, and the slight oxidation works really well. Finishes with some flavors of black cherries, toffee and dry oak wood with a light toast or char note as well. Probably the best beer of the Divine Reserve series.
