Commercial Description:
Our Divine Reserve is a series of single batch beers, each brewed with a completely different recipe. The batches are identified by the number on the neck label. There is no particular theme to the beers, although it can be assumed that most all of them will be big. Many will benefit from being aged. Reserve No. 1: Barleywine Cases Made: 327 Date Brewed: August 18, 2005 Date Bottled: October 17, 2005 Original Gravity: 1.099 Final Gravity: 1.027 Alcohol: 9.3% ABV This big, barleywine was brewed with pale Maris Otter malt as a base. This was supplemented with Munich and Chocolate malts which gave the beer a very chocolatey flavor in the fermenter although it rounded out considerably by the time it was bottled. It was heavily hopped in both the kettle (with Northern Brewer and Cascades) and in the fermenter (with Saaz). When tasted in the fermenter, the hops were very aggressive but after two months of aging, they mellowed. The beer was fermented at 72 F with our Saint Arnold yeast giving the beer a full, creamy mouthfeel with pleasant fruit. This batch was unfiltered which, combined with the high protein Maris Otter malt, makes for a very hazy beer. The first few cases were packaged without an in-line hop filter which resulted in some hop particulate in those bottles. After about 30 cases (and the bottling line being gummed up), we put the hop filter in-line. This filter is very loose and only removes hop bits. While this beer is ready to be enjoyed immediately, it should develop well in the bottle over time.

12oz bottle, courtesy of lb4lb. Thanks, Deniz! Pours a murky rust-brown color; thin, light tan head with patchy lacing. A dense, caramel and dried fruit note in the aroma; generous, dense, and a pleasant effect from the oxidation. Full mouthfeel: dried caramel, dried dark fruits, toffee, and a creamy, buttery note throughout; very dense and generous in the mouth; excellent caramel and chewy maltiness. Lengthy, doughy and dried fruit in the finish; plenty of dried caramel.

Sample provided by kmeaver. Hazy brown body with a small beige head. The nose is sticky sweet caramels, pine, grapefruit and plums. The flavor is moderately sweet, moderately bitter with light oxidation, toffee, plums, raisins, pine and citrus. Full body is soft with light carbonation. Solid BW.

12 oz bottle shared with padrefan98. Murky brown decent head. Molasses, dark fruit, and sweet malt aromas. Flavors were similar. Raisin and brown sugar. Pretty good.

Poured a lightly hazy red brown color with a small, off white head that left light lacing on the glass. Aroma of dried fruits, sticky caramel malts, citrus, light floral hops, with some pine as well. Taste of more caramel malts, dark fruits, roast, light chocolate, pine, tobacco, and light alcohol in the finish.

12oz bottle acquired in trade with lb4lb (thanks!). Poured a deepr and cloudy amberish / brown color with a small sized off white head. Aromas of nuts, caramel, light chocolate, roast, and some dark fruits. Tastes of caramel, lighter toasted nuttiness, dark fruits, and chocolate. Alcohol well hidden.

Bottle from lb4lb (thanks!) - viscous dark amber pour, nearly headless - aroma of date, fig, plum, brown sugar - quite roasty, with a hint of peat and smoke, cut with a perfectly balancing malt sweetness - candied fruits and some dried herbal notes add complexity, as the smoky flavor become more apparent with each sip - perfectly balanced, with no hints of oxidation/degradation, despite it’s age.

Thanks to hopdog. Pours a milky, brownish amber with a smaller creamy off white head. Aroma of dark fruits, leathery, vanilla, some nuts, caramel, toffee and some malty grains. Flavor of the same. Very smooth and creamy. Lots of dark fruits, toffee and toasted notes.
