Commercial Description:
Our Divine Reserve is a series of single batch beers, each brewed with a completely different recipe. The batches are identified by the number on the neck label. There is no particular theme to the beers, although it can be assumed that most all of them will be big. Many will benefit from being aged. Reserve No. 1: Barleywine Cases Made: 327 Date Brewed: August 18, 2005 Date Bottled: October 17, 2005 Original Gravity: 1.099 Final Gravity: 1.027 Alcohol: 9.3% ABV This big, barleywine was brewed with pale Maris Otter malt as a base. This was supplemented with Munich and Chocolate malts which gave the beer a very chocolatey flavor in the fermenter although it rounded out considerably by the time it was bottled. It was heavily hopped in both the kettle (with Northern Brewer and Cascades) and in the fermenter (with Saaz). When tasted in the fermenter, the hops were very aggressive but after two months of aging, they mellowed. The beer was fermented at 72 F with our Saint Arnold yeast giving the beer a full, creamy mouthfeel with pleasant fruit. This batch was unfiltered which, combined with the high protein Maris Otter malt, makes for a very hazy beer. The first few cases were packaged without an in-line hop filter which resulted in some hop particulate in those bottles. After about 30 cases (and the bottling line being gummed up), we put the hop filter in-line. This filter is very loose and only removes hop bits. While this beer is ready to be enjoyed immediately, it should develop well in the bottle over time.

Bottle. Although I think this is a little too young to drink, I have to rid my fridge of beer, so here goes. Dark tawny brown body with a thick ring of bubbles. Nose-big sweet malty BW nose. Smells like LME. Taste-dirty, bitter, milk chocolate, raisin, really sweet fig, stale hops, bad foul aftertaste. A huge disappointment. Oh well, this is SA’s first attempt at a barley wine, so I will cut them some slack. Better luck next time.

Bottle from that KISS freak kaggie97!!
Drops a small tan head with good retention and a solid stringy lace. Hazy brown brew, thick yeasty layer that i tried to leave on the bottom but to no avail. Nose of dark malts, dark fruits and a touch of molasses. Body is full thick and rich, coating. Lotsa medium sweet malt flavors, chocolate, roast with a big hop bill screaming from the depths for a little attention. Finish is medium sweet with a raucous hop bite. I feel lucky to get a shot at this limitedly available brew Thanks Kevin! You rock bro!!

Aroma was that of strawberries and a milk-chocolate almond milkshake. Tons of caramel and coffee...nutty with a bit of whole-grain cracker. Nice sticky lacing. Prickly alcholic finish seemed to clash with the hops but it worked as it warmed. Tasty. Thanks to fly for the bottle.

Bottle courtesy of kaggie97. Very appreciative of the hard to get bottle. Murky medium brown, very oily, with tons of sediment. Only scant film for head. Pailhead had top half of bottle and it was perfectly clear. Aroma is all roasted grain, some faint caramel malt. Flavor much the same, roasted grain, caramel and the faintest fruity esters towards the finish. Seems off in the finish, very metallic like. Little let down, but glad I was able to ty it.

12 oz. Bottle. Dark amber in color with a thick tan head and lacing. The aroma is of toffee, caramel, and nuts. Lots of flavors from sweet toffee and nutty flavor to a nice piney bitterness in finish. Chewy mouthfeel. Very good now but it will age well.

Bottle: Courtesy of Styles. Aroma of toffee, caramel, molasses, light banana bread, and a touch of hops. Pours a somewhat transparent mahogany with an insignificant off-white head that almost instantly fades to a ring. Toffee, caramel, and banana bread up front. Light nuttiness in the middle and a light citrus hop finish. A touch of metal comes on all of a sudden in the aftertaste.

I just got 4 more bottles purchased slightly against "recommendations" by the State of Texas, so I thought I’d open one of the 3 I finally got: Pour is deep amber with a nice dense tan head...also, huge yeasty chunks abound...smell is sweet and has some delicate citrus notes to it...definately has some hoppy piney notes too...taste is sweet up front and turns nicely hoppy, but not American Barleywine hoppy, as it is still rich and chewy in the mouth...just a nice 70-30 hop/malt flavor...nice slightly sweet finish...

Bottle shared by Nuffield: Pours a viscous transparent dark amber mahogany with a thin light tan head. Aroma has lots of sweet, but not aggressive caramel malt with some subtle green floral hoppy notes. Nice full toasty sweet malty body has a nice bittering hoppy balance toward a lightly sticky and warming finish. A year of age and this will be really nice. Thanks Patrick!
