Commercial Description:
Saison Athene is a bottle conditioned saison brewed with chamomile, fresh rosemary and black pepper. A dose of wild yeast at bottling adds to the complexity.

750 ml bottle, the first batch. Enjoyed on the metra ride home from pre-DLD. Pours a cloudy orange with a white head. Yeasty nose. Citrus, earthy, sweet with grains and bread. Sweet flavors. Caramel grains, yeast, spices, a little grassy. After drinking great beers, no one wanted to finish this one. And after you’ve had a lot of great beers, its hard to pour beer back into a 750 when you’re on a moving train.

Pours a cloudy peach color with white head. Strong citrus aroma. Sweet flavor with hints of lemon and spices (coriander, cinnamon). Medium body with average carbonation. A decent saison. Very refreshing, a great summer brew.

I’m kinda drunk right now, should I be rating this? I have spell checker so I think I can pull it off. Clear first pour but hazy golden yellow near the bottom of the bottle. Very sweet aroma of candy sugar, cane sugar, wheat and plain, clean pils malt. Flavor is mostly sweet, mildly prickly, a bit oily and resinous, and there’s a bit of a flare up in the finish with this strange twang, but overall it’s a pretty drinkable beer. It does not hold water next to the Fantome I just drank, but otherwise it’s not so bad.

750ml bottle thanks to matt....pours a cloud orangey brown with a thin soapy off-white head.... aroma of semi sweet skunky funky cheese.... flavors were a little grassy and some more off flavors.....i just didn’t dig this one at all.

750ml bottle. thanks holdenn. pours cloudy lemony with white head. nose is funky, dirty, cheese. flavors are cheesey, musty, biscuity, some grass. thin mouth feel. just a mess of a saison.

Golden in colro with a thin lacy white head. Some carbonation but its light. Honey in the smell and the taste. Medium body. Somewhat thick and sweet and the back of the mouth.

Bottle courtesy BigMilly8 - Thanks Bud. This bottle was a terror to open up...cork was in solid! Pours like a hard cider...golden with no head. Aroma is spicy (coriander, lots of cinnamon, pepper), with some musty accents, apple, and some light floral notes...a nice bouquet. Flavor is interesting to say the least...the cinnamon continues to stand out, but there’s a large contingent to go along...some barnyard notes, buttered popcorn, yeast (especially on finish), coriander, and some hints of hops. A bit of metallic flavor mixed in mid-drink as well detracts somewhat. Not bad on the palate, but the carbonation was too low...very flat and this affected the drinking experience. A bit dumbfounded by how seriously flat this was given that it took me about 10 minutes to get the damn cork out! Usually I’m a love it or hate it with Saisons, but this was one of those odd ones right in the middle...wouldn’t go out to buy this, but it was good to try once. I can only guess this young brewery is having some slight bottling issues, as after perusing some of the other reviews, many are having ’frothy/bubbly’ experiences, while at least one other seems to have replicated my experience...oh well!

This was a tasty beer. Very lovely cloudy golden pour. Nice yeasty bitter citrus, fruit, and apple flavors and earth. Mild spice... peppery. I’m no expert on saisons, but it looks like I’m going to be on a saison kick for the next few weeks. This was quite enjoyable. Thanks, dchmela!
