This bottle was a terror to open up...cork was in solid! Pours like a hard cider...golden with no head. Aroma is spicy (coriander, lots of cinnamon, pepper), with some musty accents, apple, and some light floral notes...a nice bouquet. Flavor is interesting to say the least...the cinnamon continues to stand out, but there’s a large contingent to go along...some barnyard notes, buttered popcorn, yeast (especially on finish), coriander, and some hints of hops. A bit of metallic flavor mixed in mid-drink as well detracts somewhat. Not bad on the palate, but the carbonation was too low...very flat and this affected the drinking experience. A bit dumbfounded by how seriously flat this was given that it took me about 10 minutes to get the damn cork out! Usually I’m a love it or hate it with Saisons, but this was one of those odd ones right in the middle...wouldn’t go out to buy this, but it was good to try once. I can only guess this young brewery is having some slight bottling issues, as after perusing some of the other reviews, many are having ’frothy/bubbly’ experiences, while at least one other seems to have replicated my experience...oh well! durhambeer (1231), Durham, USA

Nice yeasty bitter citrus, fruit, and apple flavors and earth. Mild spice... peppery. I’m no expert on saisons, but it looks like I’m going to be on a saison kick for the next few weeks. A bit mediciny taste with very little of the funk/barnyard taste one would one expect in a Saison. Not the best example of the style-needs some work. At any rate, it poured a hazy golden straw color with a white head that seemed to hang around forever. Aroma is lemon zest, herbal notes, light malts, earth. Flavor is fruity, lemon, herbal, light malts. Palate is medium bodied, medium carbonation, finished tart and refreshing. One of the best saisons I’ve had the pleasure of drinking. Pours a brilliant golden that is slightly murky and bubbly. Topped with an everlasting silky, creamy snow white head. Aroma is full of spices and herbs - cloves, cinnamon and some unknown herb - reminds me of a cross between an organic health food coop and an independent record store that sells a lot of "paraphernalia" - all in all - earthy and bold. Full-bodied, thirst quenching and bold flavor with some fruit forward notes dominated by pears. Spices are found with some of the same ones found in the aroma dominated by cinnamon. A pleasant butteriness permeates throughout. A bit of yeastiness makes its way into the back end. Mouthfeel is creamy, yet spritzy at the same time. Aroma was like something from an apple cider. Flavor was sweet with cinnamon and fruit with pumpkin spices?...Reminded of thanksgiving. Medium carbonation. Not bad.
