Commercial Description:
Saison Athene is a bottle conditioned saison brewed with chamomile, fresh rosemary and black pepper. A dose of wild yeast at bottling adds to the complexity.

Pours an orange/yellow color. Fruity, light, Some sweetness. very refreshing Saison. Lots of flavor. Well done overall. Second beer from this brewery and it, too, is very good.

yellow gold with an effervescent head. Big aroma, with white pepper and yeast. Very peppery at the beginning, with some musty earthiness from the yeast. Well carbonated with a bit of an alcohol bite. One of my faves in my favorite style.

Pours a super bubbly clear yellow with a huge white creamy head that actually stays on as a one-inch head for the entire session and leaves sheets of lacing. A great looking brew. The aroma had plenty of yeast along with some citrus hints, especially lemons. Spices are in there as well plus a hint of some sourness, maybe funk. The taste is a bit spicier than the aroma with lots of pepper and coriander. The sweet yeasty backbone supports some semi-sour lemons and a bit of funk in the dry finish. The mouthfeel is highly carbonated and dry in the finish with lots of spiciness in the taste. This is a decent representation of a saison and I’m always happy to see a decent Belgian-style brew here in the Southeast.

750 ml bottle from daknole?? Pours a hazy straw color with a thin white head. The aroma is a pleasing combination of doughy malt, pepper, cinnamon, herbs and spices, even a slight amount of mint. The flavor is much of the same: a base of doughy malt with a big herbal/spicy presence, vanilla, honey, and yeast. The mouthfeel is medium, carbonation moderate, and easy to drink.

750 ml. bottle from CelticBrew. Hazy gold under a quickly settling fizzy white head, filmy lace. Floral honey, light citrus, some spice, and a distant earthy funk. Dry, light body, medium carbonation, clean palate. The honey comes through in the flavor, accompanied by some acidity and sourness that provides the dryness in the finish.

Bottle shared by nbutler11. Smells spicy and Christmas-y. Tastes neat at first - like an apple saison. This wears thin however, and ends up reminding me a lot of Two Brothers Avalon - a very persistent watery, synthetic apple flavor.

Finally put this one in the fridge and got to drinking it. Pours a dark yellow color and pretty clear. A big white head. Pretty full bodied with a big malt profile, a bit of spice, and some lemon citrus. Clove and cinnamon spice flavor. Aroma is cinnamon and a little pepper. Paired well with my scallops tonight. All in all a full bodied brew but was expecting something a little more delicate and subtle.

Bonus bottle courtesy of gunhaver. Pours a hazy straw color with a trim white head. Smells pretty rough - almost like shoe polish. Tastes completely different, thankfully, with all of the elements of a great apple crisp - plenty of green apples, cinnamon, nutmeg, and yeast. If I had another bottle of this I would actually try heating it up and throwing in a cinammon stick for a holiday brew.
