Commercial Description:
Saison Athene is a bottle conditioned saison brewed with chamomile, fresh rosemary and black pepper. A dose of wild yeast at bottling adds to the complexity.

Bottled, thanks daknole! Hazy golden, airy head. Funky fruity cinnamon aroma. Sweetish and lightlyyeasty with spritzy rounded mouthfeel. Fruity and fairly complex. Notes of citrus and marzipan. Quite lovely!

cloudy yellow, creamy white head, lots of drippy lace, tart lemony aroma with fresh bread character and light spices, creamy body, rich malt flavor, lots of doughy bread, lots of nice spices, sweet lemon character like a lemon drop with only a hint of tartness, lots of spicyness

aroma is getting a lot fruiter with strong lemon and orange character that gives it a mulled effect with the spicyness, the fruityness is coming through a lot stronger on the flavor as well, the fruit and bread character with the creamy body makes a great combination

Hazy dark straw colour. Aroma is floral (chamomile), spicy (black pepper), fruity (blackberry), yeasty, slightly vinous and there’s a hint of brett in there as well. Brash and intense, this smells almost intimidating. On the palate there’s a peppery fore with raspberry and cherry esters. A lingering earthy hoppiness melds well with dusty yeast notes. A little bit lively going down. Alcohol is present just enough to provide a backbone for all this craziness. Quite refreshing, on top of everything else.

Cloudy pale blond color; high carbonation, but the head has very little retention. The aroma is very peculiar; it mixes flowers, lemon, herbs; even some cobwebs; very light hops. The body is light, the mouthfeel is dry; the flavor is light, it reminds some dry honey, with a soapy flowery accent, some lemon and spices. Very original and pleasant.

(11/3/07, 750ml bottle, thanks artusory) Cloudy lemon yellow body with small off-white head. Aroma is medium sweet, yeasty/dusky, orange, pear, some melon, light alcohol. Taste is medium sweet, yeasty, some lemon, nectarine. Light-medium body, lightly creamy.

Bottle shared courtesy of egajdzis. Poured a deeper and cloudy yellow color with an averaged sized white head. Aromas of ginger, white pepper, other spices, citrus, and yeast. Tastes of teh same.

Objectively speaking: An extremely yeasty, highly original Saison that, and you’d definitely not suspect, comes from Florida.
I like: Powerfully aromatic, fully estery with vibrant fruit and spice medley – think of a pungent gewurztraminer. Very original flavours. Exclusive house character (a bit limey/gingery like a funky 7-up, unclean and musty). Malt is limited to a support role.
I dislike: Like for the Lectio, the finish stays rather dull and dead bready yeast cuts short the flavour development that was captivating up to now.

(750ml bottle) Pours a cloudy golden body with a small white head. Aroma of apple, melon, floral, cork, mustiness, white pepper, and biscuit. Flavor of light yeast, herbs, some citrus, and coriander with low carbonation.
