Saison Athene is a bottle conditioned saison brewed with chamomile, fresh rosemary and black pepper. A dose of wild yeast at bottling adds to the complexity.

The bottle opens with a giant pop. Watch yours eyes!! Nice clear bubbly gold with a good three finger white head. Great lacing, and the head dies to an awesome rocky, collar. Initially it has an herbal smell (as in weed), and then after breathing a few minutes a nice jasmine, almost heather note appears. Lots of spicy hops with juniper, coriander, an almost gamy note, oak, a weird mustiness, and some funk. Really a complex aroma. The taste is clean and crisp and refreshing. Great tea notes, lots of spices and hops, and a solid bubbly sour finish. The complexity and drinkability are through the roof proving some new nuance every sip. I could drink this non-stop. A unique yet traditional farmhouse ale that is very underrated.

Big time thanks to SoLan for bringing these down for me to try. I told him to bring 2 bottles of his choice, confidently knowing that they’d be awesome selections. This brew pours a murky orange-gold with no head and clean patterns of lacing. The aroma is incredibly enticing: fresh oranges, creamy wheat, and Tang. No, not Poontang, the orange drink. Right away, I could tell this is a great saison, as it’s light in the mouthfeel, but complex in flavor. Tastes include coriander, grapefruit, mild yeast, Fruit Loops cereal, nutmeg, cinnamon, and passionfruit. Light, airey...and most of all: SMOOTH. Intriguing, yet refreshing. One of the easiest-drinking saisons--and overall beers--that I’ve enjoyed. Simply put: awesome. Great job from a very small and new brewery.

Bottle from mcbackus, big thanks Matt! Nice cloudy yellow pour with huge white foam, beautiful meringue-like foam with nice retention and great lacing. Peppermint, dusty yeast, lemon peel and white wine in the aroma. Absolute bone dry deliciousness, just a hint of granny smith apple and a very well restrained bubble gum character. There are spices, but I can’t figure them out. I love that, much better than getting assaulted with a spice cabinet. Seriously drinkable. Love it.

Aroma is sour, funky, sweet, with a subdued spiciness. Taste is caramel, apples, lots of brett and funkiness, and a bit of spice. Mouthfeel is very dry, but has a lingering sweet, caramel fullness that rounds it out without being too "crisp". Holy fuck. This beer is awesome. More notes: The sourness is really starting to come out of this beer. Somewhat fizzy mouthfeel. The head just sticks there like a bubble bath. No great amount of dissipation. Lots more caramel and apple still with only a hint of the spice (vanilla, lemon rind, earthy hops, cinnamon, mint). No alcohol present, but perhaps the carbonation could disguise itself as a harshness attributed to alcohol. This is really, really good.

750 ml bottle corked and caged. from my secret santa. pours hazy golden with very active carbonation and a lovely white head. aroma of hops and funk, spice, yeast, pale malts. flavours are similar with more pale malts shining through then the other components. not quite enough funk but still very good. 750 mls wasnt enough of this one. thanks santa for this amazing saison!

Light gold, fluffy head. Smells like applesauce. Plenty of cinnamon flavor to go along with a delightful smooth mouthfeel. Some prickly pear.

rerate 5-10-08 Grapefruity on the nose (not hoppy though), sweet citrus fruits, kumquats, floral, with a lot of spice! Pours blonde with a thick white head. This batch has definitely improved! Super spicy, balanced by sweet malts with citrus peels, a really great flavor!! Awesome Saison!!!!! Sweet lemons on the nose, with hints of mint and a little tartness. I really like the aroma, I hope its as refreshing as it smells. Pours couldy yellow gold with a thin white head. Smooth, hints of lemon peel, creamy, sweet malts. Sweet lemonade with some spices, it is very refreshing. There could be more carbonation for the style but the flavor is there. It’ll only get better with time, it feels a little young.

Bottle with atleast a year on it: wow cant beloeve i jave mot rated this one. Pours a very clear dark straw golden color with a good white head that last. Aroma is awesome full of peepery goodness, herbal chamomile, slight brett, sweet malts, apricot mango like fruit. Just full of so much. I love it. Flavor is also peppery with a slight tart and a good sugary sweetness. Nice tingly palate a world class saison.
