Commercial Description:
SAISON DE PIPAIX 6 %vol. 75cl a traditional Wallonian saison beer, born with the brewery in 1785. Dry, normally hopped, slightly acidic, very spicy (black pepper, ginger, sweet orange peel, curaçao, star anise...)

750 ml bottle from 1995 joyously shared with beerbuzzmontreal, ClarkVV, MartinT, tiggmtl, olivier, Rastacouere and Simon at the Farmhouse Ales and More! tasting in Montreal. Wisps of cloudy suspended yeast dominate a fiery gold body with very little head...cinnamon, allspice struggle to be smelled amidst musky sour barnyard aromas and old dried citrus fruits...orange-lemon notes at first in the flavor soon replaced by a cider/vinegar character, certainly some oxidation and age but overall the effect is mellow and smooth, a pleasant spring evening..

Pours a hazy orange color with a ring of white lace. Very good aroma of spices, yeast and orange. Very good tart and acid flavor of orange, spices and yeast. Light body, creamy texture, soft carbonation. Very good saison.

Woody, bitter orange-citrus, coriander, peppery aroma. Hazy orange-copper with light cover of white head that leaves some lacing. Woody, spicy flavour with mild band-aid phenolics and strong citrus-orange character. Medium body seems somehow still and lifeless despite the fair carbonation. Bottle (1995) enjoyed with beerbuzzmontreal, ClarkVV, MartinT, muzzlehatch, olivier, Rastacouere and Simon.

Amber/gold body with a bubbly tan head, highly effervescent. Aroma is lemony and sour, slightly funky, stale. Palate is rather light. but bursting with flavor. Tart and sour dominate, with some basement/musty flavors as well. Finish is sour and dry.

03.31.05 750ml bottle, 2004. Dark honey amber pour with small beige head. Aromas are musty and vinous, orange peel, potpouri-like spices, barny, and corky. In fact, I got a strong whiff of cork when I cracked this bottle. Complex flavor profile is quite vinous, more musty grape, sour. Wet wood and yeast linger, dancing with an array of spices. Tart lemons come through in the finish and really help focus the beer to a puckering and dry finish. Whatever is going on here works, this one’s a delight.

Nice saison very appetizing pears and candy apples aroma with some floral spice, almost a bit of ginger. Balanced with a touch of acidity and white pepper. lemon tart finish with some wheat and asparagus notes.

The beer as it sets fresh from the tap a foggy orange-amber color with the head smallish and a semi-creamy in texture and the color off white, as it evaporates the lace left behind forms a silky thin sheet. Nose has a semi sweet fruity aroma, over ripe pears and green apples, fresh and inviting, start is slightly sweet with the back tart and the top light to moderate in its feel. Finish is mild in its carbonation and the tart fruit flavor continues toe the last sip, a fine drinking beer, one I enjoyed immensely.

After the uncapping and uncorking, this poured a hazy orange color with a briefly lived head. It’s got some mustiness to the aroma, also light malt, orange, ginger, and barnyard aromas - hay, wet blankets, etc. Interesting. The flavor is malty with quite a mixture of spices. Can I detect the ginger, pepper, lichen, orange peel, curacao, and star anise that the brewer says is there? No. But it is complex and tasty. It finishes on a dusty, tart note. Interesting.
