Commercial Description:
SAISON DE PIPAIX 6 %vol. 75cl a traditional Wallonian saison beer, born with the brewery in 1785. Dry, normally hopped, slightly acidic, very spicy (black pepper, ginger, sweet orange peel, curaçao, star anise...)

Very light carbonation by the sound of the cork extraction. Poured a bright orange amberish color with little head. Fruity aroma with faint hint of malt. Flavor was similar with a light tartness and horsiness. A good Saison and easy drinking.

Orange glow of a color. The head is very weak and fleeting. Tangerines, horse blanket aroma, a bit of cotton candy. Very little sweetness, but fruity. Very lambic-live, but not as tart as the hardcore gueuzes. A little pipe tobacco. Not sure if the beer was this lambic like originally or if it’s the aging, but it tastes intentional.

1997 750mL. Pours a very rosy orange. Light yellows and almost a pink hue to it. Good amount of sediment. Fleeting white head, lots of lacing. Aroma of cheese, cheese and more cheese. Wow, is this beer brewed with blue cheese??? Amazing. Very funky, lots of serious yeast, blue cheese, bacteria (which creates the cheesy smell), and some very faint ripe fruit notes. Flavor is heavily funky, more cheese, no trace of the hallertauers, dont taste the ginger either. Has a soft, round body, medium and somewhat oxidized. Very good for being this old though. Balance is wonderful. Tends to the sweet side, but not overly so, with a drier yeast flavor coming on in the finish. A bit of residual spice is felt, though it has dulled out quite a bit I would imagine. Wonderful and different. I will be buying the 96 vintage next time I go shopping. 9/5/8/5/18
1995 750mL Glad I got to try this, as I will have had the 95 and 97 with the 96 in my cellar. All of the sour, spoiled fruits and funky, acidic lactobacillus, heavily aged hops and tart citrus in the nose. Flavor is full of cheese, musty barnyard notes, old sour oranges, spoiled grapefruits, more rhubarb and light cider. For a 10 year old beer, this stuff is remarkable. Medium body, good amount of oxiadation, but not overly so/more than expected. Very soft carbonation, but it is still present. Oily mouthfeel. I think, for my tastes, that I preferred this stuff 6 years old instead of 10, but it is still fantastic, IMHO. 8/5/8/4/17. Score is an average of the two years.

Poured a tan/orange. Aroma was almost like blacberries. Taste had some tang to it and an undertone of grapes and citrus. A bit too much tart "tanginess" for my tastes.

Bottled. A beer that looks like peach juice, with its hazy grey/orange colour. Fruity nose, reminiscent of overripe/rotten apples with notes of pepper and Sevilla Orange. The flavour is peppery, a bit sour with coriander notes. Light bodied.

Bottled. HAzy amber. A spicy aroma and flavour with notes of coriander, overripe apples and pepper. A sourish and sweetish palate.

very hazy deep gold, white head. aroma is very perfumy and funky with lots of barnyard, apple peel, lemon, and spices. the flavour is equally funky with woody sourness and spicy apple notes. 1995 bottle. has held up very well. delicious.

Vintage 1995. As usual, I didn’t notice this tidbit until I was pouring the bottle. Burnished orange color, nice lasting head, very impressive for a 9 year old beer. Aroma was unrepentently horseblanket, with sourness. Flavor matched, with a subtle note of apples and gentle spice. The spouse stole the rest of the bottle from me and told me to go buy more. Awesome beer, would have been worthy of #600.
