The aroma is funky, shoe leather, sour apple, ginger, musty old photographs, and citrus. The flavor is musty, citrusy, damp, earthy, and a finishing sourness. The beer is ever so slightly-hazy and a pretty copper brown color. The head is very persistant & produces the classic Belgian Lacing. An aroma of cider & fresh apples, slightly musty, and a hint of sharp astringency. Taste is lightly sweet, perhaps a bit of acidity. A very earthy taste to this beer, though light in body, it gives this beer a certain richness. The high carbonation gives this beer a tingly sharp bite as it slides past one's tongue. Quite an interesting beer, that I definitely recommend. A soft apple fruitiness in this beer is the predominant taste. Musky aroma of tart fruit, some hay, yeast, and bread. Strong nose. Some alcohol is apparent as well. Spicy flavors of sour apple, balanced with just a hint of sweet citrus. Lemon and grapefruit. The yeastiness is there. I have to say it's quite spicy, clove mostly. The palate is slightly sticky, body is full, and the finish is tart. A bit dusty as well. Very nice. Maybe some iron. Yeast taste, yes - but grain, fruit, cookie malt too. Ends citrussy and tart, enhanced by the carbonation. Light to medium bodied. Dry, and acidburn. It's tart, and fruity, sharp. | 4 | Aroma | Appearance | Flavor | Palate | Overall | | 8/10 | 5/5 | 7/10 | 4/5 | 16/20 | Jan 10, 2004 moderate to deep golden hazy color with a thick creamy white head and some great lacing. lots of fruit in the aroma and also the unmistakeable scent of spent fireworks, and some apple and a few other fruits that i cant identify. flavor is roughly the same, a lot of apple, and a thick creamy mouthfeel. i think i can pick up on the orange peel, but the other spices, i cant quite pick up on...this is damned tasty. quite a bit better than saison dupont in my opinion. as this beer warms, it's amazing how much the pepper comes through.
