Pour moi le mélange d’épices très bien choisi, le goût acidulé complexe qui rappelle les meilleures gueuzes, la complexité des arômes et le goût d’ensemble font de cette bière une des meilleures que je connaisse.

750ml. Taste and aroma of a dusty, damp, somewhat mildewy rug that’s been sitting in the corner of the basement. That’s followed by a sour, dry finish. Interesting enough because of all the funkiness, but not richly complex. Large, fizzy, off-white head that diminishes fairly quickly. Muddy light orange/amber body. The aroma is dusty with notes of cobwebs and mustiness. Hints of fruit, apple cider, honey and grape. The flavor is lightly to moderately sweet, moderately acidic and lightly bitter. Medium body, thin texture. Fizzy carbonation. The mustiness stays through the finish along with a dry sourness.

The beer has got some peppery flavor with some strong herb like aroma and texture. Its got some slight tang in the end, its very refreshing.

The aroma is malty and funky with yeast, citrus, spice, pepper, and hops. The appearance is amber with particulates floating and an average head. The flavor is like the aroma and slightly funky. The palate is thin. Overall it’s not bad.

11.2 oz Bottle (2000 Vintage) - Pours a copper-yellowish with decent white head. Smell is like that of a Gueze; slightly sour, fruity, spicy, and a little funk. Taste is similar, but VERY subtle... maybe it has aged too long? Nonetheless, a good beer, but needs more a bolder flavor.

Bouteille verte, avec bouchon de liège, de 750 ml obtenue via Importations Privées Bièropholie. Arôme: Odeur d’agrumes avec une pointe d’épices et de miel. Apparence: La couleur est orangée foncée voilée avec une faible densité de bulle. Présence d’un mince col mousseux et d’une fine dentelle sur le verre. Saveur: Léger goût d’agrumes, de melon et de melon. Courte durée de l’arrière goût. Palette: Le corps est moyen avec une texture légèrement huileuse. Faible effervescence en bouche. Légère présence d’épices en arrière goût. (Rating #1757)

Pours a copper color with a thin white head. Aroma is slightly sour, with a hint of strawberry and melon. Taste is about the same with some yeast characteristics. Not too bad but nothing special.

Pours an reddish amber color with very thin off-white head. This bottle was a bit old but luckily the carbonation held on. Aroma is slight citrus with the yeast taking center stage, citrus and a bit of light strawberry make an appearance as well. The yeast is more subdued compared to the Fantome BonBons I had but the particulate is in full affect. It’s good, but not remarkable.
