A little corny when first poured, that fades as the beer warms and breathes. Pour has a fabulous white head. Taste has more of that spelt thing, white wine grapes and a good bit of funk... including blue cheese and hay. A bit thin for my tastes, but that makes it quite drinkable. A touch boozy though, even at only 6%.

TheBeerOrg (1586), Kentucky, USA
| 4.2 | Aroma | Appearance | Flavor | Palate | Overall | | 8/10 | 4/5 | 8/10 | 5/5 | 17/20 | Feb 11, 2007 Pours light golden with a fully receding wispy white head. Aroma of grassy noble hops, herbal notes of chamomile with spicy pepper quality. Taste is spicy, citric, yeasty with herbal notes. Mouthfeel is light to medium bodied with lively carbonation. The addition of spelt makes the beer very crisp and refreshing. A very enjoyable saison. entropy1049 (40), Oxford, Iowa, USA
| 4.1 | Aroma | Appearance | Flavor | Palate | Overall | | 8/10 | 4/5 | 8/10 | 4/5 | 17/20 | Feb 7, 2007 Pours slightly cloudy yellow with lots of carbonation and a huge off-white head. Smells like pine and resin and some sharp citrusy grapefruit or lemon. Acidic and dry, more pine and citrus on the tongue...very light in the mouth. Super dry finish with a little pepper.. | 4.1 | Aroma | Appearance | Flavor | Palate | Overall | | 8/10 | 5/5 | 8/10 | 4/5 | 16/20 | Jan 31, 2007 Bottle: Poured a golden yellow color ale with a thick pure white foamy head with good retention. Aroma consists of funky Belgian yeast with some big malt and some spices or hops that provide a very herbal feel. Taste of floral malt with subtle funky yeast and a dry finish from (I believe) Saaz hops. This beer is definitely not filtrated with lots of sediment at the bottom and lots of carbonation. Very well done and something that I will enjoy drinking often – a session saison if I can say. RedHaze (370), Where the hell am I?, Nebraska, USA

Pours a slightly hazy pale yellow, with a fluffy two finger head hat fades very slowly to a thick cap. There’s tons of little streams of bubbles floating to the top to keep the head going, and the lacing completely covers the inside of my glass.
Smell; there’s a little bit of hops in the nose that go along very nicely with a lemony citrus. There’s a nice earthy quality in the aroma as well as a touch of peppery spices, with just some hints of Saison funkiness in the background.
Taste: the citric lemon flavor is the first thing that hits me, along with a mildly bitter hop presence. The funk is a touch more pronounced in the flavor than it was in the nose, and mixes well with some earthy spiciness.
Mouthfeel/Drinkability; mouthfeel is medium bodied, and this has a ton of carbonation that’s a bit on the harsh side for me, and the drinkability takes a hit to due this. Otherwise the drinkability of this one would have been really up there.
This was my Thanksgiving dinner beer, and overall I was not disappointed at all. A pretty darn good beer to sit back with and enjoy on this beautiful turkey day. detroiter (958), Euphoria, Minnesota, USA
| 4.4 | Aroma | Appearance | Flavor | Palate | Overall | | 8/10 | 4/5 | 9/10 | 4/5 | 19/20 | Jan 13, 2007 Following an explosive pop of the cork, the beer pours initially clear, then a hazy pale gold topped by a mountain of acid white foam. Extremely effervescent, the beer takes several minutes for the head to die down to a sniffable and drinkable level. Each subsequent pour re-creates this huge topper of foam. Good head retention (let’s hope so) and spotty lacing. Tart citric aroma - lemony and funky.
The flavor is on the dry side, but not as tart or pungeant as the aroma signalled. To me, it comes across as something between a wit and a nice light rye beer, both in texture and in flavor. Light citrus tang in the finish. Medium body, very refreshing. Walt (2289), Chicago, Illinois, USA
