Bottle shared with DownsouthGav. Colour is hazy yellow with white head and good lacing. Aroma is fruity, spicy, slight sulphur. Taste is earthy, yeasty, fruity. Finish is bitter / malty. Very nice and easy to drink.

750 ml bottle. While this saison is not overly complex — nor heavily spiced — it is straightforward, solid and easy to drink. Appealing large frothy white head that looks like merengue. It stis atop a hazy yellow body that is heavily imbued with particles. Heavy malt aroma of grain followed by hop notes of grass and celery. A mustiness is evident as well as some light spice notes. The flavor is light to moderately sweet, heaviy acidic and lightly bitter. The finish turns sour/tart and dry. Lively carbonation with a light to medium body. The first sip reminds you of a very good pilsener, but there is much more going on. Every bit as refreshing. Excellent.

750ml corked & caged bottle: Pale lager yellow pour that rousts a rim high bright white that eventually settles, leaving plenty of lace in its wake. The aroma is quite lagerish with initial notes of grassy hops and sweet malts. More subtle notes of earthy wheat and citrusy esthers come through as the beer warms. Thinnish body that is spritzy with carbonation. Interesting, seems simplistic on the surface but is complex as you spend more time with it.

A cold pour throws up its arms in a fuming fashion pushing foamy suds to the brink of my goblet where it rests as if a sleeper in slow motion. Lacing is sticky and fluffy w/ strong aromatics perfuming the whole room. This is a class act people. I can smell vanilla cream, citrus, tropicals, milky spice, and a bit of sulpher. The color is a bright creamy yellow almost casting off a light of it’s own. Medium nectar w/ expansive effers on the palate. Crisp and malty, bright and refreshing w/ a defined gunsmoke thing going on. The flavors really follow the aroma to a T. Theres a nice skunky bittering component on the finish. It’s delicate yet very complex.

I remove the cage and the cork explodes out of this one almost before I can get my face out of the way. I put my hand over the bottle but it acts only as a thumb pressing the nozzle of a hose, spraying beer all over the kitchen, my clothes, and into my face. After all of the excitement settles down, the beer pours a lightly cloudy gold with a reasonable amount of light-bodied floaty material and a large, beautiful fluffy white head. The beer offers an aroma with yeasty spiciness, gently tart nose, some sour grass, banana esters, crisp euro-hops. Gentle lemon tartness, slightly chalky, definite spice and a bit of aged cheese from the yeasts (most notable on the last pour of the bottle with the yeasts along for the ride), hint of lemon peel, crisp hopfield close. The carbonation is outright prickly shortly after opening the bottle, too much so. As the bottle warms and the carbonation mellows over the susequent two hours, the beer improves considerably. It’s enjoyable, refreshing, and would be a delight to try fresh to tap. In the bottle, it’s good, but not as funky or complex as some other saisons and ultimately not near the top of the style for me even though I am hard pressed to point out any brewing flaws in the beer.

Green 375ml bottle topped with a cork and a wire cradle. Huge, creamy snow white head, rapidly fading away. Unclear, straw-yellow body. Spreading smell of wheaty tartness. Very dry palate with flavours of late lemon, spices and dry yeast. Lively carbonated. Not memorable (carried home from LDBF in March, 27.04.2008)

Pours a tiny amount of beer with a gigantic amount of head. like 80% head. It took 10 minutes to pour the whole glass. Also This beer has a huge amount of "chunky" yeast. The first time I had this beer we poured the yeast into our glasses (split with Marc). The second time I kept the yeast out (split with Kevbo). Once the head fades, it leaves a barely visible amount of foam at the top and a ton of sticky lacing on the sides. You can taste the Spelt as long as you don’t pour the yeast into the glass. I swear to god the "Chunky" yeast kills the flavor of the spelt. But that’s all you can taste. In all honesty I wouldn’t go out of my way for this beer. I love this style of beer and this one is mediocre to barely good at best. It has a champagne like mouthfeel. Bubbly and very carbonated. Over all? hmmm At the time of this rating this beers averages an A-. That’s crazy. This beer isn’t better than a B- Grab a Hennepin instead! Not on my list of beers to have again.
