The soft, wit-like yellow cream colored body, blends almost seamlessly with a large-bubbled white head which sits both deep in the glass and high on top sticking out. After a few minutes it has collapsed in on itself, leaving a thick and patchy coating of white sea foam clinging to the side of the glass. Watching this beer and its head settle, grow and die is like watching art being created. The pungent horseblanket, wheat, lemon grass and sweet buttery vinegar scents are immaculate. Close to the finest scent I’ve ever found in a beer. Whenever I drink saison, especially one with a nose like this, I’m always anticipating that punch of acidic, funky, concentrated heaven that you get from really good gueuze. It’s a rather weird situation when my palate is expecting gueuze but it gets... cream, flowers and yogurt? Not that I’m disappointed, but rather surprised, and it helps draw the drinker in, to convince you that you need to pay special attention to the nuances of this beer. It has the sourness of sour cream, meaning it’s really not sour in the true sense of the word, but rather it’s a mellow lactic acid creaminess, again like yogurt. Overall one of the premier beers in the world, and the gold standard for saison, so for me it deserves a perfect 5.0.
NachlamSie (1326), Tennessee, USA Aug 21, 2008 Small bottle. Pours a very cloudy bright orange/yellow with a tall white head. I found the aroma to be super cheesy with funk, far away goats, and a quick fading dash of skunk and mulch. Again, lots of cheese is presented in the flavor. This is floral and juicy, yet slightly puckering in the finish. I had this while camping on the beach and boy is it refreshing. It’s a wild and deeply nuanced beer, yet approachable by any aspiring connoisseur. fata2683 (62), APO, New York, USA Aug 21, 2008 Hazy and cloudy out of the bottle with a little bit of yeast sediment. Cloudy yellow colour, big white head. Aroma of yeast, bit sour fruits, malts. Flavour is dry, fruity, a bit sour apples, hoppy finish. Very tasty and refreshing beer. Aroma earthy with grassy hops and faint light fruits. Flavor quite sweet and more robustly fruity, lots of oranges and reds. Very nice, even a year old, gotta try this one fresh.
