Commercial Description:
Our Pale is an all grain, close fermented, lightly hopped, handcrafted ale. We steep and sparge the freshly milled grain, in a slow and deliberate process using both a mash tun and a lauter tun, before pumping it over to our kettle. Once in the kettle, we bring it slowly to a boil and add hops in incremental stages, for bittering, aroma and flavor. While in the kettle, the wort must be carefully attended too as it threatens to boil over. After the boil is complete and all of the hops have been added, the beer is slowly cooled through a water chilled cooler and brought to a perfect temperature for pitching our yeast. After a period in closed fermentation, the ale is passed through a filter into a brightening tank where it awaits packaging. Nothing in our brewery is automated, ensuring that each step in the brewing process is hand crafted. We use a hand selected blend of organic malts with a primary base of Briess organic 2-row pale. The Briess 2-row malt is known for it's smooth and mild qualities. We add top-secret specialty malts to give the ale robust body, rich colour, and foam retention. The results are clear. Hops selecting in our recipe formulation is difficult since there are so many amazing organic hops to choose from. Again, we use a top-secret blend of organic whole hops in our pale ale but we favor an aromatic beer so we use an age old method of 'dry-hopping' - adding a final 'tea-bag' of organic Kent Goldings in the brightening stage. Organic Kent Goldings hops are grown in Belgium from the original rootstock and are known to be one of the finest hops in the world.

Bottle: Dirty golden, huge rocky white head, clumpy lacing, very cloudy, strong carbonation... very strong.   Musty barnish nose, soft graininess, peppery, and flora.   Yeasy, somewhat bready on the tongue.   Remains grainy, but not as much as the nose suggested.   Interesting take on an American Pale with Belgian yeast.   Remains musty, barnish.   Comes across as like a Belgian Amber.   Body and mouthfeel are moderate to full.   Some hop presense at the finish, otherwise mainly yeasty, grainy, and barnish.   Bizarre, but decent.   Thanks Bill for the bottle!

Bomber from Bottle Trek. Hazy gold color with a one finger white head. Aroma of floral/citrus hop - rather light. Medium+ body with creamy carbonation. Flavor is a little citrus sour over very lightly roasted caramel. Then floral hops bloom. More of a light ESB than an APA. It’s quite delicious. Finish is pretty balanced: a little hint of sweet, but bitter to stave it off.

Bottle. Golden beer with a big whitish head. Slight citrus aroma. Orange citrus and caramel flavor. Finishes with caramel and lingering light hops. Easy to drink. Medium bodied.

22 oz. bottle from BevMo LaJolla. Pours hazy pale amber, with a small to middlin’ white head that leaves a few spots of lace. Aroma is primarily fruit and sweet, with toasty notes and hints of floral hops. The flavor is sweet, gentle, with tangy floral and citrus hops in the finish, and is for the most part satisfying, save for the bit of ashiness in the middle. Medium body and crispy carbonation. Not a bad little APA here, could be a servicable session beer.

Sampled out of a 22oz. A mild brew that doesnt quite have the bite that some of the other brews do. Light on hops and malts but has a nice hue and palate. Worth the sample!

Bomber poured a clear yellow with a large lasting white head. Aromas of bread, light straw and light spice. Palate was light bodied and crisp with a dry finish. Flavors of straw, bread and a hint of spice with a crisp dry finish.

Thick head, nice lacing, but way too hoppy. Nice malt taste. One of the best organic beers in the area. Definitely worth a try, but it leans to a home-brew like quality.

Bottle. Head is initially large, frothy, white, mostly lasting. Body is light to medium yellow. Aroma is lightly malty (toasted grain), lightly to moderately hoppy (flowers, herbs), with a strong note of detergent, notes of lemon and honey. Flavor is moderately sweet, lightly acidic, lightly bitter. Finish is lightly sweet, lightly acidic, moderately bitter. Medium body, velvety texture, lively carbonation. Another oddball from Santa Cruz...and again difficult to rate due a combo of pleasant, unpleasant, and downright unexpected aspects. Upon removing the cap, there was ZERO headspace. I’m not exaggerating...the liquid was FLUSH with the top of the rim and even slightly spilling over, and it was not being coaxed out by foaming action. First time I’ve seen that in all of the thousands of beer bottles I’ve opened over the years. Santa Cruz clearly needs to work out their kinks.
