I’m not sure where the smoke is coming from, but there are all sorts of phenols here. There’s even a little cheese. No carbonation. Aroma is sour apple, granny smith, vinegar, funk, and yeast. Flavor is vinegar, band-aid, apple, smoke, lacto, with some earthy cowpile-esqueness. Unique. Quite clear, pale yellow with slight induced fizz that fades quickly like a proseco. Aroma is mildly sulfurous, musty, and a touch acetic. Sprightly bodied stuff with brisk acidity and mild wet farmhouse funk. Sour and citrus filled cider with pleasant funk and some grassy and black peppercorn that I assume must come from yeasts? Fun stuff that is easily drinkable yet challenging as you might want to make it. Wish I had some salty and oily cheese and olives to pair this with, as that would probably work well. Flavor is a very tart sour fruit, cheesy funk, vinegar, rotten apples. This was nice at first, but got to be a little nasty after a while. The funky lacto apple mix becomes unapealing. Aroma is dusty and slightly cheesy, like a cider lambic. Rather acidic; that I would assume comes more from the bugs than the juice itself, with a bit of sweetness to counteract it. This is pretty wild, and quite an interesting drink.
