I expected a full-bodied doppelbock malting, but a received a clean dose of wheaty ebullience instead--with a hint of woodiness in the atmosphere as well. Wheat is again the predominant character in taste though enough malt underneath stanches the appearance of any bitterness. Eventually, the alcohol breaks through in both aroma and taste. Hazy brown, huge fluffy white head in my Aventinus glass (just like the picture). Nose and flavor are quite complex with hints of spicy clove, pear, banana, sweet bread, and brown sugar. Tangy, fruity, spicy, with only a slight hint of hops near the end to round it out. Medium to full-bodied, fizzy carbonation, tangy, dry, spiced fruit finish. Consistently an amazing brew.... Good fruitiness in the flavor, banana and lemon predominate. Slightly wit-esque in its clove spiciness, but restrained enough to not overpower. Big, big malts finish up. Had a big chunk of yeast on the bottom which I swirled off. Has the typical-for-the-style banana, yeast flavors. Alcohol well hidden. Very good. Head is huge! - it’s officially the biggest head I have ever seen on a beer that I poured myself. Smells of pepper, lemon, lime, bananas, chicory and cloves. Tastes yeasty and spicy; cloves and banana, but with roasted and chocolate doppelbock characteristics as the undertones. Can taste alcohol. First few sips were interesting, but after the three sips, I was nearing beer heaven. Drank this one at about 40-50 degrees, so taste was rich and right on the money. Reddish brown with a large head and good lacing. Aroma banana, wheat, caramel, chocolate, cloves... more. Very complex aroma and the flavor is better. Fairly sweet finish, but not overly so. Pours amber with tan head.
Aroma of wheat, dark fruits - fig and prunes -, malts.
Taste, close to the same as aroma, plenty of dark fruits, thick grainy mouthfeel with presence of wheat, caramel malts. Lots of sweetness. Gains a lot of flavor as it warms up.
