Commercial Description:
Home-grown heritage apples, including Winesaps and Gravensteins, were hand pressed using our traditional rack and cloth press, slowly fermented with Champagne yeast then aged in rum barrels. Notes of brown sugar and spice give complexity to this semi-dry sparkling cider. Admin: 2006 batch, barrel-aged in Newfoundland Screech Rum barrels. Summer 2007 release.

Bottle purchased from Brewery Creek. Pale straw colour with a thin fast fading head. Champagne-like appearance. Aroma is really incredible. Rich fruity nose with lots of rich sweet caramel and toffee over a bright vanilla/toasted oak character. Very faint tannic character on the back. Spritzy/creamy body with a lovely soft lingering sweetness. Dusty apple skin character on the finish that adds a touch of spice to all the apple/pear fruitiness. Really impressive stuff.

Pours straw color with soe fizziness. Smells of apples, rum, some oak, brown sugar, some subtle pear hints ae also there. Tastes dry initially before giving way to an intense tartness accompanied by a funky undertone. Finishes with some hints of rum. I’d drink this every day if I could. Excellent cider!

Brown sugar, vanilla, apples and a tart underlying note round out the aroma. Brilliantly clear and sparkling deep golden body. Pleasant note of plums or raisins accompanies the apples and brown sugar flavours. Quite tart without being at all sour. Alcohol is notable in the finish and in a fair warming sensation. Light and sparkling with strong effervescence. Really very good and just what I needed to pull from the back of the fridge on a cold and rainy Vancouver winter evening as the uncharacteristic snow finally begins to recede. Wish I had another bottle. Hopefully the next vintage measures up! Wine glass. Just above fridge temperature. Bottle. Brewery Creek. Aug-07.

750 ml bottle from CapFlu, Thanks Todd. I assume it is the 2006 since the bottle says 11%ABV. Nose of rum, tartness, and contrastingly mildly sweet apples, to go with the oak, very green appley to my nose. Clear darker yellow gold with some floating bubbles from the carbonation. Flavor is rummy, mild woodiness, moderate tartness, and slightly sweetness of the apples. Finishes slightly tart. This would be a favorite usual drink if I could get it. If I get up to Victoria soon I may need to buy a case to take home.

Nicely carbonated gold. Aroma is rum, oak, cane sugar, a light green apple aroma. Taste is apples, light white rum, oak, alcohol. Pretty good.

Bottle (750ml). Shared by jerc with the gang. Clear leggy gold, no real head. Spicy baked apple aroma, on the tart side with background brown sugar. Taste - very tart, nice and slick, nice little burn going down though, made it seem almost peppery - simple, medium thick bodied, no aftertaste - decent.

Bottle, shared at Paul’s BBQ ’08, thanks to Jerc and Mabel. Very apply nose. Golden pour, not much head. Taste is apply as well, very tart. Simple, not complex at all, but tasty.

[1566-20080802] 750mL bottle. Old apples and wood barrel aroma. Clear, light yellow body with no head. Boozy apple skins flavour is not sweet initially but kicks in a bit later. Light-medium body. Average, was not enamoured with it as the rest of the crew.
