750 ml bottle that weeare138 got from the brewer. Pours a lightly hazy brown with a bunch of amber notes and a small to medium bubbly/creamy off white head that left sticky lacing down the sides of the glass. I had heard the 750’s of this beer have been lacking carbonation and have held onto the two bottles I have for probably close to two years (if not longer). Was surprised to hear a light pop and poured with a decent head. Aroma of dark fruits, toffee, caramel, lots of various other fruits, toasted malt, some floral notes, bready and Belgian yeast notes. Flavor of dark fruits, Belgian yeast, hints of citrus, some floral notes, doughy, toasted malt, toffee and caramel. Sort of has a sweet malty thing going on, but also coming across kinda dry. Carbonation on the light side but seems appropriate for this beer. Really smooth and at 11.8% the alcohol has really toned down. I’m glad I sat on this one for so long and I have one more bottle left that I plan to age even longer.

Thanks to Steve for sending this my way a while back! Poured deep brown with a surprisingly well-retained cap of beige head. The aroma picked up sour oak and cherry notes with some dark fruit and earthy character behind.. tangy and well-preserved. The flavor found caramel and vinous sweetness with a touch of chocolate at the core.. sour cherries, vanilla, black pepper, and light oaky sourness surrounded.. finished warm with lots of tasty stuff (for lack of a better descriptor). Heavily-bodied and warm on the finish with a lengthy finish.. well-balanced, even integrating the mild oxidation it carried.. good one!

Shaun Hill’s last beer from the Shed on tap at BBD 08.25.07 Dark brown pour with a medium to large light tan head. Aroma was very nice with a ton of dark fruit, caramel, candi sugar and earthy yeast. Taste: tons of caramel, dark fruit-raisins, light notes of chocolate, with candi sugar, light fruity esters, and belgian yeast. Very full bodied, almost seemed like a belgian barleywine. Finished with lingering fruit and malts, with a nice sweetness and light notes of yeast across the tongue. Alcohol is moderate in the taste and in the finish. Definitely a sipper. I think this may be the best American made quad I’ve had, and another year or so would make this incredible.

750 bottle with no label on it. Cloudy orange/brown color with no head. Minimal carbonation. Aroma of maple and brown sugar. The flavor was the same with orange peel/chocolate notes. Sweet, rich, and chewy with some alcohol in the finish.

I couldn’t believe that Jason had this sitting on the table at Flossmoor. I also was surprised that he and I were about the only ones who remembered how highly sought after this beer was at one time. Thanks a lot for sharing Jason! Brown body with a decent tan head. The nose is wet oak, raisins, and hints of sherry. The body is thick and sticky with low carbonation. The oxidation has certainly started to set in, but I think it is making this more complex and interesting. The flavors were rich sweet raisins, caramel, and hints of spices. Really intriguing brew.

Appears a turbid dark russett with a small, creamy, off-white head that quickly fades into a mild film and collar. A few tiny CO2 bubbles rise slowly to the top from a little pocket at the bottom of the glass. Spotty remnants of lace are left around the glass. Smell is of sweet caramel, earthy notes, brown sugar, raisin bread, toasted nuts, along with phenols of over-ripe bananas and a hint of booziness. The aromas remind me a little of Rochefort 10 without the dustiness, or mineral water traces. Taste is of sweet sugar cookies, brown sugar, condensed syrup, cocoa, along with Belgian yeast and a heavy dose of candi-sugar. Probably still a bit young but the sugar content, yeast, and phenols make for an intriguing Quad with sweetness that captivates natural, fruity pectins of prune juice, olive leaves, figs, rum soaked raisins, along with freshly baked brownies and a low dose of cinnamon. Mouthfeel is full bodied, sugary, syrupy, sweet, lip smacking, and filling out the palate with complexities of spices, cocoa, caramel, heavy sugar and syrup. The low amount of CO2 makes this brew more of a sipper along the lines of a digestif brandy, or cognac. Overall, this bready, chocolaty brew is clean but still very raw and sugary. IMO, it will be outstanding given the appropriate time to mellow and develop more character. Shaun Hill is a brewing virtuoso that has the talent to transcend the beer community on the East Coast. Expect great things, fellow Americans...be it at The Shed, or not!

ksbf 07. 750 ml bottle. Pours a deep ambery brown with a nice lasting dark beige head. Aroma is estery and fruity as hell, but not out of control or fusely at all- tons of plum, prune, raisin, some apple, and just tons of thick sweet malts- lots of special B dark crystal, and caramel, toffee, and molasses everywhere with subdued blegina spice and yeast. More fruity esters in the flavor with lots of dark malts sharp caramel,. nuts, hints of chocolate, blegian yeast appears as it warms with the alcohol hidden nicely behind all the malt. Thick and sweet all around. Will probably last 5-10 years with no problem.

Bottle… O-Town Throwdown Part TresThis beer rocks!… Murky, prune-colored ale with a small, creamy, off-white head. Light molasses and overripe apple essences to go along with lots of dark fruit esters, phenols and malts. Sweet, dark fruit and light molasses flavor also offers mild bitterness for a semblance of balance. Full-bodied with moderate carbonation. Coarse, dark fruit finish. Thanks go out to Dickinsonbeer for sharing this world class Quad!
