Aroma is yeasty- high phenolics, some farmhouse hints, grassy and herbal hops with some lemony tart hints. Dirty yeasty flavor which works well in this saison, herbal, big full bready malt profile, light sea-salt, and hints of brett throughout. Nice crisp dry finish. This was a very good Sasion. Almost clear copper with a big white head. Hops, hops and more floral hops. Very juicy. Medium-high bitterness. Some citrus & cheese. Simple but effective. I was at the BCTC 2006 Belgium beer festival and I needed a hop fix to reset my palate from all those strong Belgium beer. Poured a deep and cloudy golden color with a small sized off white head. Aromas of yeast, funk, and some spices. My 3 year old daughter was downstairs when we opened this one and I asked her what it smelled like. She said, ’that smells like cheese’. And you know what, I agree with her, it does have a cheese aroma to it. Aroma of citrus fruits, light spices, some barnyard, and somewhat cheesy, yeasty aspect as well. Taste of citrus fruits, dry, doughy yeast, spices, and a lightly bitter, hoppy finish. When Mike opened this one up it exploded all over hopdogs bar. Aroma of cheese, funky, yeasty with some roastiness. Flavor of bread, some citrus, yeast and a slight hop bitterness.
