The look: partly cloudy golden body topped by a medium off-white head
In long: Nose has a strong farmhouse character along with a nice bouquet of wild flowers. Taste has juicy crisp caramel, flowers juice, juicy citrusy hops. The brett here is incredibly under control and mellowed out by the generous amount of juicy citrusy hops. The beer ends-up feeling more like a very wild Saison than a bretty beer. Body is pillowy, carbonation is relaxed. I had a tasting from a fresher bottle but the beer still had some residual sugar. Now nearly 6 months later the yeast ate it all and the beer is nearing perfection. With an aged bottle everything is so well integrated in this beer that it becomes really hard to dissect or categorise, this is really a tough one to figure out, just like most signatures.

A small, frothy white head leaves behind minimal sudsy lacing that mostly rejoins the body. . Spicy and fruity aroma, orange peel, apricots and a soft earthy/spicy yeastiness. Flavor is burly crystal malts, but quite dry, moderate bretty character, cherry syrup, fruity chalkiness (sweet tarts), clean finish, lightly orangey. Off-white whipped cream head with excellent retention leaves sheet lacing. Sour fruit and biscuit malt aromas. Hazy amber pour, slight dissipating off white head. spicy orange peel aroma, yeasty and delicious. small amount of alcohol at the end. Citrus hops, orange peel. Spicy alcohol at the finish. Aroma is sweet and perfumey, like honeysuckle. Rather pithy citrus bitterness with intense carbonation, and a dry, spicy sour edge, and a trailing sweetness. Hazed amber color with a taller beige head that slowly settles leaving a curtain of lace. Pale malt sweetness and orange zest scents. Hints of yogurt, grapefruit, and a nips of funk. Starts with a strong caramel flavor. Flavors not as promising as the aromas in this one. Roots of licorice, more orange zest, light resin, dried weeds and flowers and some spice, mostly from the alcohol, come out. Complex, but not balanced. FInish is fairly dry and the linger is quite bitter and somewhat biting. This is one of those brews that you can sit and think about things for awhile. You can ponder where the flavors are coming from and where are they going, both from a time and temperature sort of thing. Will this be better in a month, or perhaps a year; or is it one that is just going to be as good now as ever? Hell if I know, I’m drinking beer. Enjoy it and shut up.
