Flavor is floral cedar with a hoppy finish. Thick mouthfeel. Fantabulous! HopHeadinAZ (120), USA Nov 27, 2007 Bottle: Pours a hazy golden with a small, fine white head. Aroma is spicy with some yeasty notes. The flavor is peaches, and apricot with some bitterness on the finish. The palate is nicely balanced. It seems to disappear and yet leave a nice coating on the tongue. This is a nice beer but I’ll look forward to coming back to it after it has had a little more time. Bottle: The aroma consists grapefruit, pineapple, floral/perfumey notes, and faint sour apple. It pours a transparent gold with a small white head. The flavor starts with pineapple and grapefruit combination that blends together very well along with some light yeastiness. There is some faint sour apple way in the background. The finish has moderate floral and grapefruit bitterness and spiciness. No sign of the 8.5% ABV in the flavor. Medium-bodied with lively, but soft carbonation. ChillCoat (1029), Concord, California, USA Nov 21, 2007 Bottle. Bright copper pour with a white head. Phenolic nose with some spice. Astringent maltiness with tons of spice character. Tons of spice. Zinister (1199), Houston, Texas, USA Nov 19, 2007 First Official Houston Tasting. Pours a glinty golden color with a small head. Spicy nose of autumn with floral and hibiscus notes. Pine comes in there as well, peaches too. Flavor is lightly hopped up front with peaches and apricots in the middle. Nice hop finish. Creamy mouthfeel that dances on the palette. NicerInPerson (337), North of Raleigh, North Carolina, USA Nov 17, 2007 200th rating!
The aroma was spicy pepper when first poured with a strong earthy character and a pleasant sweet fruit presence. The aroma was bready and citrusy and seemed young in the world of Brett. The citrus and fruit worked well with the peppery spice to add depth and complexity. The beer poured into the chalice clear golden amber with a moderate white head which rose well and retreated slowly to lace the glass. The flavor was slightly sweet with a menthol characteristic which was herbal. The flavor was also bready and citrusy and had a light presence of Brett which did not seem to have reached it’s full potential. The flavor was subtle and interesting with complexities of Belgian yeast and Brett. The finish was dry with lasting strong fruit flavors and peppery spice into the aftertaste. The body was medium with a moderate level of carbonation and a creamy palate. This one may benefit from some aging for the Brett character to develop, but currently it is certainly a tasty brew. 750 ml corked and bailed bottle.
