Spicy nose of autumn with floral and hibiscus notes. Pine comes in there as well, peaches too. Flavor is lightly hopped up front with peaches and apricots in the middle. Nice hop finish. The aroma was spicy pepper when first poured with a strong earthy character and a pleasant sweet fruit presence. The aroma was bready and citrusy and seemed young in the world of Brett. The citrus and fruit worked well with the peppery spice to add depth and complexity. The beer poured into the chalice clear golden amber with a moderate white head which rose well and retreated slowly to lace the glass. The flavor was slightly sweet with a menthol characteristic which was herbal. The flavor was also bready and citrusy and had a light presence of Brett which did not seem to have reached it’s full potential. The flavor was subtle and interesting with complexities of Belgian yeast and Brett. The finish was dry with lasting strong fruit flavors and peppery spice into the aftertaste. The body was medium with a moderate level of carbonation and a creamy palate. Aroma is flowery and fruity with a hint of pine and a wiff of alcohol. Flavor has layers of complexity with a touch of leather, citrus, honey, eucalyptus, pepper, grapefruit rind, spice and wood finishing with a dry, mild bitterness. I have a couple of these bottles, both from Jimbowood and a couple that I have picked up around town recently. I was highly impressed with this one. Aroma, appearance, flavor and palate are almost all perfect. Yes, it’s a well hopped belgian, but I really found this to more of a triple. Superb head retention leaving a thin silky sheet with a few islands. Strong aromas of cave sulpher, brett, dried salted meat, and aged fruit salad. Full nectar w/ soft, creamy residuals effers. This beer is beautiful. Strong flavors yet perfectly balanced right off the bat. A solid fruit backbone w/ strict peachpit bittering that sets up shop early. An ingeniuos use of hops. Theres a defined earthy cave character that intrigues me. Nuances of wild apple, vanilla cream, citrus rind, mild banana spice. The finish is bittered better than well and leaves a mild asprin tingle. Signature is a very complex beer with a full range of aromas and flavors. A strong earthy character sets the stage with rainbow of supporting fruit nuances to make this a classic event never to be forgotten. This is the best beer I’ve had in a while. Aroma is all IPA -- grass, floral and sticky pine hops. Taste is like grass-infused blonde belgian--yeast, lemon, dirt. Funky, moldy finish with medium to thick body, quite carbonated, almost no alcohol unless you try really hard.
