Superb head retention leaving a thin silky sheet with a few islands. Strong aromas of cave sulpher, brett, dried salted meat, and aged fruit salad. Full nectar w/ soft, creamy residuals effers. This beer is beautiful. Strong flavors yet perfectly balanced right off the bat. A solid fruit backbone w/ strict peachpit bittering that sets up shop early. An ingeniuos use of hops. Theres a defined earthy cave character that intrigues me. Nuances of wild apple, vanilla cream, citrus rind, mild banana spice. The finish is bittered better than well and leaves a mild asprin tingle. Signature is a very complex beer with a full range of aromas and flavors. A strong earthy character sets the stage with rainbow of supporting fruit nuances to make this a classic event never to be forgotten. This is the best beer I’ve had in a while. Yeasty creamy nose that’s soapy with orange citrus becoming ever more dirty. Dirty earthy herbal flavors. Oranges soapy and dirty. Aroma of citrus (I think both esters and hops), more orange/red fruits, some grassy hops, bittering hops, sweet pastry malt, light but slowly growing bretty notes. Flavor remains more sweet than bitter despite the hopping, with the hops just adding a little different take on a beer that would otherwise be yeast-based. The brett again is there but struggles to make its presence known. I would have liked more of the brett, and in general I just didn’t find the hopping interesting enough to make this one all that special. Very floral on the nose with just a small hint of bretty funk. Clean and soapy. Citrus oil. Candle wax. Cut flowers. Pours bright copper with a big white head leaving excellent sticky lacing. Very soapy on the tongue. Hints of flowers, just a touch of funky yeast, powdered sugar, pear, wax. Interesting with a lighter bready malt base. Intense aroma of citrus oil and apples, lemon juice and mint, some heat. Crisp and grassy hops lead the flavor with a spicy kick, oily and brisk with green spices and herbal notes. Suggestions of wheat and sweet dough fill in the middle, leading to refreshing but quieted sourness. Crisp, but heavy in the mouth; somewhat slick. Finishes with heat and citrus juice, drying quickly. Not stunning, but a unique collaboration and memorable to that effect. Thanks for sharing, Ken!
